- I’ve had quite a wild ride over the past 6 years. As Co-Founder of 2 brands, The Pizza Bakery and Paris Panini I've learnt a lot about building and scaling a product-led food business. We've since grown to 27 outlets across Bangalore and Colombo.
I’ve learnt a lot through this journey of building success in the food industry, the most important nuggets being - Productise food, build an experience delta, don't re-invent where demand doesn't exist, always re-invent on top of what people are already consuming.
See.. I think there’s enough gyan (guru-ness) on the internet. And although I’m tempted to dish some more out, I tend to not feel confident enough, or experienced enough to start doling out advice so early on in my career. I’m 34. And have a good 20 years of learning left.
So instead, I’d like to take some of what I think is the secret sauce to being successful, and put it to the test. From scratch. With all my learnings from The Pizza Bakery & Paris Panini.. I’m going to launch a profitable Burger Brand. And put it on a path to becoming a 100cr ($12 million) brand.

Amazingly honest!!! Being someone with lil liking for burger the Leon grill burgers are my go to. They’ve nailed the patty n sauces but with respect to the right bread -still not there

Depends on which state you’re in. In Karnataka, beef is frowned upon so what’s locally available to consume is buffalo. In Mumbai beef is banned entirely.

As a super burger enthusiast myself, absolutely cannot wait for you to come up with the ultimate gourmet burger! I have tried countless burgers in Bangalore and have been impressed only a couple of times. My go to burger is the classic beef burger from Sankys Burger, all American lamb from Truffles and the beef one from burger signeur
Sounders Burger:
1/4lb Natural Beef Patty, Lettuce, Tomato, Onion, No Pickle and Home Made Sauce on a Brioche Bun. A slice of Pepper Jack Cheese, Cream Cheese, 2 Strips of Bacon, Grilled Jalapeno w/ garlic on Brioche Bun

Will put this brand ‘on a path’ to becoming a 100Cr brand.. in 100 days. Can’t actually build a 100cr brand in 100 days unless it is a VC pump & dump :) But what we can try and do is give this brand all the tools necessary to go in the direction of Paris Panini & Pizza Bakery which are individually 100+cr brands.

4. And last but not least , a thick, flat, sturdy metal spatula to smash them burgers ..... there are burgers and then there are smash burgers 🍔, Bangalore has NoNe.

Good stuff Ab. What drives me to choosing a burger place is often the quality of the fries they serve. You can’t have a good burger place without good fries IMO. One of the best burgers I’ve had in my life was in Chicago in a place called Au Cheval. Try recreating their millionaire bacon.

You’re absolutely right. My primary goal is to focus on the process. The same process, we followed at The Pizza Bakery and Paris Panjni will be applied diligently, with adaptations as required.
The byproduct, should be a 100cr brand, eventually.

Truffles is a good old school burger.
