Hi. Question out of curiosity, I see alot of creators using modeling chocolate instead of fondant. They say its less sweeter than fondant and better tasting. Is this true? If so, why is fondant used more, is it less costly ?

My every problem is that when I put the fondant on the cake perfectly, smoothing everything out with no bubbles too, it forms a bubble overtime 💀 my room temperature is not warm at all. It’s so bad that I never want to try fondant again because it’s formed a bubble 3 times. Is the only way to avoid it through poking a hold on the middle just in case?
Is fondant hard when eaten? I don't think I had eaten a fondant cake in the past (and I'm not really a cake person to begin with since they're only served occasionally where I live)
