BAKLAVA CHEESECAKE
Servings: 8-12
Difficulty: Medium
Cooking time: 2 hours
Prep time: 60 minutes
20 sheets of phyllo dough
100 g butter, 3.5 oz
80 g sugar, 2.8 oz, 4 tablespoons
2 handfuls of fresh unroasted pistachios, chopped
2 handfuls of walnuts, chopped
1.5 tablespoons honey
Cheese filling,
800 g labneh, 28.2 oz
250 g granulated sugar, 8.8 oz
60 g strained yogurt, 2.1 oz, 2 tablespoons
3 teaspoons all purpose flour
1 sachet vanillin (5 g) OR 1/2 vanilla pod OR 2-3 drops of vanilla extract
2 eggs
- Preheat the oven to 180 C (356 F) on upper and lower heat.
- Melt the butter on the lowest heat.
- Grease and sprinkle 4 tablespoons sugar on phyllo sheets one by one and stack them.
- Cut the phyllo sheets an inch wider than the springform cake tin (after baking it will shrink and fit in the tin.) leave a rectangular line. Place the clamp-in part of the tin on.
- Take the rectangular line three by three and place on the dough covering the sides of the tin. Poke some holes to the bottom to prevent rising while baking.
- Blind bake (put baking paper in the middle, pour dry legumes on it and spread it to the edges.) in the middle of the oven for 25 mins, take out the legumes and paper bake for another 5 mins until golden and leave it to cooldown. Bake the leftover dough pieces as well for extra crisp.
- Add powdered sugar into the labneh and mix it with a spatula. Add the strained yoghurt, flour and vanilla and mix again. Break the eggs into them one by one and mix them. Do not use electric mixer. It will cause to cake rise or/and crack.
- Clamp in the tin on the dough and pour the cheese filling. Tap the tin on your counter for a couple of times the get rid of the trapped air.
- Lower the temperature of the oven to 150 C (302 F) and place a bowl of hot water on the bottom of the oven. This will creat steam and prevent the cracks on cheese filling.
- Place the cheesecake on the middle shelf of the oven, bake for 50 minutes. Turn off the oven, open the oven slightly and leave the cheesecake inside for at least 20 minutes, ideally 45-50 minutes to cooldown slowly (again to prevent cracking 😅)
- Take it out and leave it on the counter to cooldown then and refrigerate at least 4 hours preferably overnight.
- Crush the baked leftover dough pieces and make a ring on the cheesecake.
- Mix the honey and water and add in the pistachio and walnut. Sprinkle on the centre of the cheesecake.
- Voila! Perfect mash up of baklava and cheesecake is ready to enjoy! - Zábava

If anyone is concerned about making sure their crust stays dry, you can brush the inside of the with a beaten egg white AFTER the first bake and before the second bake without the chickpea/rice/etc that you are using to weight down the dough. Brushing with a beaten egg white and then baking will cause the protein in the egg white to basically create a protective layer on the top of the crust that will resist moisture.
This technique is invaluable if you are using a pretty wet filling. Obviously, this is less of an issue with a thick filling like cheesecake, but it could be a real help if you decide to try to use this phyllo crust for a different type of pie.
Baklava, cheesecake, tiramisu...you cannot go wrong with any of these.

It’s cooling as we speak! The blind bake crust looks incredible after blind baking it. I had to add more weight to the crust after removing it from the oven to keep it from puffing up.
After baking for almost an hour, I cooled it down in the oven and very fine cracks appeared. No big deal, I added the pistachio and walnut topping on it to hide them. I also didn’t use a cake pan (can’t find it), so I used a deep steel frying pan instead.
Next update in about four hours when I attack it! I wish CZcams would let me post pics in the comments.
@@Refika Is it Labneh or Labneh cheese? I have seen tubs marked as Labneh in my supermarket but I always thought those are drained yogurt
@@Refika It was very delicious! Next time I make this, I would use more melted butter on the phyllo sheets. Add a layer or two of chopped pistachios to the phyllo crust. Finally, I would use slightly less sugar in the cheesecake mix - I used 220g of sugar, and it was still sweet; maybe 200g.

Totally awesome. I made it for Thanksgiving. I used confectioners stevia instead of sugar at about half to 2/3 and lemon yogurt. I recommend a brush for buttering the phyllo sheets. I skimped a bit and I think it would be better if I hadn't but it's still epic level. Additionally my end result is very thick. I'm looking for something to cut that down a bit. I used 4x philly cream cheese blocks so a little more than this one calls for and it took about 90m to bake it. THANKS!

I like to use sugar for blind baking, after a few uses it start to get noticably caramelized and a bit brown, very nice for use in basically anything. Especially in teas.

There are a number of recipes floating around now for Baklava Cheesecake, but yours is the ONLY one that doesn't use "standard crust" (they just put some phyllo on the top). This looks like the real deal. THIS will be my birthday cake this year!

There was a restaurant here that had baklava cheesecake. They went out of business years ago. Last year I tried to recreate it. I feel it turned out pretty well. My effort was not dissimilar to your approach, but I will have to try your tricks next time. The shrinkage of the phyllo while baking did not occur to me, for example. Very clever solution. Also, I would love to see anything that you would like to do with tiramisu. Finally, is there anything like a Turkish creme brulee? Creme brulee is another favorite of mine.
I grew up in a Italian and Greek neighborhood and every year at the Greek church they would have picnic and they would have the baklava. One word. Delicious. This is a genius idea…..as usual! I think tiramisu or cannoli filling would be delicious!
