  • How to Make Smoked Beef Cheek Barbacoa
    Traditionally, barbacoa is made from an entire beef head that is buried in an underground pit and wrapped in maguey leaves, but MOST of us don't have fast and easy access to entire animal heads, so smoked beef cheeks are an awesome substitution for barbacoa.
    Smoked beef cheeks are similar to mini briskets - they are rippled with collagen that converts to gelatin during the cooking process. Unlike traditional barbacoa which can taste more "steamed" the smoke process gives you beautiful flecks of dark bark and a deeper layer of smoke flavor.

    I’ve been thinking about making barbacoa. You can get it everywhere here at the southern tip of Texas. I’m sure I’ll have no trouble finding it at the many meat markets close to home. Down here they also make tongue along with it. You can order tongue only, cheek, or mixed half and half. This is a cook I have to do!

    I love my Cabeza tacos (basically mostly beef cheek meat) and I happen to have a pack of beef cheeks in my fridge I was planning on cooking with an old Mexican recipe but this looks worthy of a try. I am always worried about getting that over boiled meat flavor so if I'm smoking them I think that would do the trick thank you so much

    I’m Mexican and I usually add hoja de laurel (bay leave) and clavo (cloves) too add great flavor.

    Well done girl! "Barbacoa de Cachete" is, like "Barbacoa de Lengua (tongue)" a Mexican delicacy... And I have never thought about smoking it: Slow Cooker, Pressure Cooker, Sous Vide yeah, but never smoked... Well done girl! 👍
    In Mexico people appreciate fat in cooking quite more than in America, as such tongue and neck which are leaner usually are more difficult to appreciate, so cooking tongue or neck + cheeks with enough fat at the same time usually does the trick even better.
    I am going to try what you showed here next week, this unnecessary lock-down is driving everyone insane... that means my freezer is full of things I cooked since weeks ago and I need to let them flow in the "nutritional consuming corporation" before cooking more.
    Like always thanks for sharing this, quite a surprise to be honest... I can't tell you better praises, coming from someone like me. Well done girl! ☺️

    Awesome recipe! I might tweak it a little, maybe leave it smoking got 4-5 hours and then rap on foil for 3 hours, just to get extra smoke flavor

    I live in the states and married to an American and I haven’t lost my Aussie accent. I also spent four years in Germany speaking German and I didn’t lose it.

    Great video. But authentic barbacoa isn't trimmed. The fat is what makes the flavor. Still great job though.

      Thats right, Mexicans don't trim meat. My Great grandmother had always taught that the real flavor already in the meat all you need is to bring out, if you remove anything even the fat your removing natural flavor that can't compare to any seasoning.

    Mexicans DON'T trim meat, we eat all the fatty, juicy goodness for the BEST Natural flavor. If your taco isn't drippy it isn't an authentic Mexican taco.
