This is the best advice I’ve ever received. As a chef for 35 years. I work in a local that has never had a Thomas Keller or a Gordon Ramsay. Now we have one and I want to impress this Chef so much. this is the absolute best advice I’ve ever gotten

I have a stage and I'm so nervous. I've been out of kitchens for two years. Have experience as a kitchen manager and sous chef, which is on my resume, but have this bad fear I'm going to underperform. Even though I cook constantly at home. Feel like I'm just being too hard on myself and psyching myself out.

Today
Got my first stage on Monday. Mystery basket. Already thought to check the menu for ingredients but their menu is Noah's Arc. I am so screwed. I just do what I'm told. "Make this this way." I also don't own knives. I always use house knives. Maybe I should cancel. I shouldn't waste their time and materials if they expect a hardcore cook. Been in kitchens for years, bur I'm just a worker. Then again, I told the Chef the mystery basket could be a mess. Still wants me to come in. Idk

@@Skellyfie It was a mess, but not of my making. The chef who originally interviewed me was out for the day, so I staged for the Sous in the middle of prep. No mystery basket. They had me cook a piece of salmon and stand around watching the line during service. I wanted to work the line, but they just had me watch. I really didn't get to show anything I can do at all and didn't get the job.
