Lye Cured Olives

  • Sodium Hydroxide (caustic soda) dissolved in water will remove the bitterness from olives relatively fast compared to other methods leaving more oils and sugars in the olive. When the chemical is exposed to the natural environment it reacts and breaks down into less harmful natural substances. Before that happens it is highly alkaline and volatile. Be careful not to come in contact with it because it will damage human flesh.

    I used to laugh at my uncle for going though this when I was a kid (but i loved the olives!) but watching your video makes me want to try it now. No shortage of olives around here either. Good vid, thanks.

    Thanks for video. I am considering getting some 8 foot olive trees and find your method very promising. Just a not about the Na/Oh (sodium Hydroxide) I am a Lab tech and in Microbiology we use NaOh to dissolve away mucus and cells to identify yeast in biological samples, so yes it is very good at dissolving your body, your tissues.

    Greate video ✌️. Man i scorched the earth here in Germany trying to buy it ready. But i guess i have to make it myself 🤷.
    One question when emptying it in the bath does it attack the aluminum/metal draining cap thingy at the bottom of the tub?

    This method seems more work than using just brine and you have to worry about working with the caustic soda or lye too. I'll stick with a salt brine.

    That’s why Olives are unhealthy.
    Anything that cannot be eaten raw I consider unhealthy, like beans & lentils. Olives are not even that nice cooked.
