    as a man from Tunisia, olives and olive oil are things in the genes since Carthage till today a heritage of 3000 years. I never imagine a meal cooked in an oil other than olive oil .I daily dip bread in olive oil with harissa or with white cheese . As a family of 3 we use nearly 6 liter of olive oil per month ..half of it me dipping the bread with olive oil ...

    I have 8 mature olive trees, so the capacity to produce a lot of olives, though it's been a few years since I did anything with them, so this video was a great reminder of how to do it right. Didn't get many olives this time around, but appropriate pruning will sort that for next season.
    BTW, I still have olives stored in oil and herbs from over 10 years ago - tried a few the other day - extraordinary in every positive sense.

    Great! Educational. One very important factor is that to actually have olives ripening, you have to live where the climate is warm/sunny enough for the olive fruits to develop and ripen. Otherwise you may get an olive tree to survive, but it will be just decorative.
    Also ... Different olive varieties are +/- suited to different climate and conditions e.g. Kalamata are from Greece (adapted to warmer climate) and Arbequina from North East of Spain (adapter to milder climate) so they "behave" differently (also taste different).

    Have to agree with all the other comments here. This is the best olive video I’ve seen. Last year was my first year I actually managed to eat some of my olives without spitting them out. I feel this year with this video I understand it better and will be an olive pro.

    Inspiring video bro! This year was my first season curing Olives and it went perfectly! Using only this video as a guide I have wild harvested from 4 different trees, including one tree at the playground I take my toddler. She loves olives so much I decided to produce my own, the irony is she will only eat the store brought olives! 🙄
    Oh well, more for me! 😅

    Thank you. One of the best video on making cured olives. I miss Sicily. My first time making cured olives with my Sicilian friend. There are so many olive trees there that people don't even pick them off the tree and left to fall and go to waste. We went on a journey and saved some and made the best homemade olives ever. You brought back these special memories. Canada 🇨🇦 unfortunately is too cold for olive trees. Thank you again.

    One of the more beautiful experiences life has given me was working for farmers in a Cretian Village. Harvesting olives in the hill's and citrus fruits in the valley. Dipping bread into the actual first pressing at the local olive oil factory is such a clear memory 50 years later. I yearn to buy oil that delicious. Every house hold was proud of their own prepared olives and home made cheese.

    We used Steve's method last year and I was a bit nervous as it was my first time bottling olives. We followed the directions exactly and received so many rave reviews and amazed looks from friends and family that we are back this year to rewatch the video so we can refresh our memories and repeat the exact same process. I'm not even looking at any other way of curing olives as this method works so well I don't want to change. Thank you Steve for taking the time to share your experience. It is most appreciated.

    Fantastic video. I am inspired to go and try your method. My olive tree is 14 years old, every year it is heavy with olives which we have just let go to waste as I have read recipes and given up on curing because it sounded to hard. I know what I am going to be doing this Easter. Thanks.

    in Greece we put them in water for 40 days to remove the bitterness and then in brine for 60 days , but i will try your method too.

    I loved your video. An excellent recipe and process and very well documented. Guessing you are in Australia from the accent. So glad you made this video. I live in Northern California - lots of olive trees here going to waste. I made my own black olives in oil, but wanted a lighter recipe and to use green olives instead, or mixed ones. Your tip about pruning the trees is true. A well pruned tree gets sunlight on all branches, which is mandatory for flavorful olives. Also, don't overwater the tree. Dry side keeps olives tasty. Thank you for the video! My feedback below.
    Love the pitting tool! A game changer. I never knew this existed. Thank you!
    Tip: Use a Wagner (cheaper) heat gun or hair dryer (longer) to heat up old jar labels. They are now easy to peel off. If soaking does not remove them, try the heat gun. Any gummy residue cleans up with a rag soaked in Mineral Spirits. Goo Gone is Acetone which is cheaper bought as Acetone, but this will ruin plastic. Spirits don't damage plastic. Wipe off oily residue, then wash well. Jars are now clean. To remove printing directly on glass, use Acetone.
    Painters tape in pale pastel colors (cheapest on Temu) is a form of masking tape that leaves no residue and comes off easily. I use this for labeling.
    FYI - Please do not add ANY MUSIC to a DIY, demo, tour, cooking, or animal video. It hurts the ears and is insanely irritating to the mind. I like to concentrate and I'm soaking up a lot of information. The mindless noise of 'music' only serves to irritate my mind till I want to shut the video down and make it stop. It serves zero purpose except to annoy viewers. Content Creators think they are enhancing their work with music and creating a background continuity, but in fact, the opposite is true. Music chases away subscribers instantly, and breaks up the thought process. Natural sounds are very soothing by contrast. We want to hear them. Voice and music are unnecessary. Do you ever hear comments saying "Thank you for the music"? No. You hear, "Thank you for no music!" instead. Talk very little, no music, and let natural sounds through. This makes for calm, soothing videos you can watch a long time with no audio fatigue.

    Thank you for this very informative video. I'm very new to the whole olive curing. Three years ago my neighbor gave an Arbequina Olive tree and today I noticed the tree is loaded with olives🫒 They won't be ready till October/November, but I'll be ready when it's time to cure them. I live in New Orleans, Louisiana.

    That is hands down the best information on how to prepare olives at home that I’ve seen, thank you so much. I’ve always given up once they became slimy thinking I’d done something wrong. Most recipes say things like - ‘preserve in brine’ at the end but no measurements or method given. I can’t wait to try it out thank you!!

    I lived two years in Athens and I made my own olives. I cut one by one with a knife and I kept them in a barrel of water, changing the water every other day for one month. After that I added the final water with the ingredients (salamoura!). I had a recipe from an old Greek man and the only ingredients I remember are vinegar, oregano, laurel leaf, some olive oil, salt etc. They were delicious!

    Good teaching vid, thanks. Last year I followed this for my inaugural attempt and made 4 jars. I added 1 small crushed garlic and half teaspoon mixed herbs per jar. Personally I found the garlic and herbs took over.
    Encouraged by last year we are now in the midst of curing 2 batches 2 weeks apart and have about 7 to 8 ltrs of olives :)) I'll experiment further with a few add ins this year but smaller quantities.
    Good onya matey and to your Italian neighbours who unbeknownst to them have passed along generations of knowledge to the world :)

      @@scottimage1 2024. Just started picking today15.4.24. Bumper crop this year (in top bit of NZ) but all smaller than last year and very few with the tan/blush colouring. Anyway I'm here for my refresher course :-j Goodonya - cheers Fieldy. ps, our home batches are so far superior than shop bought. Wife only eats ours and goes without if we give too many jars away and run out :))

    Fabulous video 🙏.. fair play! You're so patient to pitt all your olives 🫒... I'm going to try (a few jars pitted this year) I have a small device for destoning my cherries 🍒 before I dehydrate them so I know how much patience is involved! I am living on a farm in Portugal for 14 years. Our technique is very similar... but much slower and lazier!...
    We leave them in fresh water for about 10 days (tip from lovely old lady at the olive press) I change the water a few times so change water every three days... then we switch them to a 10% brine (100g sea salt per litre of water) weighted down with some bay leaves on top... and wait for about 6 months!
    I love your tip for jarring them all up. Great to give as gifts that way.

      @@scottimage1 definitely do. Regenerating an old avocado orchard into a native-dominant, syntropic, mediterranean food forest is the goal, and I barely scratched the surface yet. 🙃😍

      @@scottimage1 we have two large trees and picked the olives yesterday to cure them. They are in water now. Loads of buckets. Like you say, every two years there is little crop but this year there’s heaps.

    i started growing olives for the first time last year. Wit Kalamata and Arbequina. Currently the third week of cured olives is passing, and I can't wait to make them in a jar according to your recipe. and finally taste it.

      @@scottimage1 Will let you know, these without pods are in the third week, almost ready for the jar. But stil have very little bitterness
      The ones with the pods will take another 3 weeks or so

    Ok I'm gonna say I have finally tried this since my nonna gave me some olives to pickle I have found that this is the best way to pickle olives I finally opened a batch after waiting 2 weeks these taste amazing thank you so much for this wonderful video I can honestly say I'm sticking to this method easy 10/10 my olives came up very happy with the results

    A great video, Thankyou. We are south east of Melbourne and have 2 young olive trees that I just got 1 jars worth of olives to try and cure. Great tip about pruning the Olive tree too after picking.
