    I "smuggled" 4 olives from Italy to my ranch in New Mexico 30 years ago and two trees are doing fantastic. Great video and thanks .

    I love this video. My family produces olive oil for personal consumptions (Palestine) and I always laughed at high end chefs pouring what seems to be triple filtered bleached half a year old oil and call it "Extra Virgin". They have no idea what extra virgin olive oil is! Me personally I love unfiltered extra virgin olive oil. Right from the fruit from the first press as is. This kind of oil has the best flavor ever. Fun fact, we have a generic term to describe some old olive trees locally as "Romanya" (Roman). Not because the Romans brought it, but because the tree was there during when the Roman empire took over the land! Some old trees those are.

      @@Stephen_Strange "Romanya" or "Romeya" which is the Arabic adjective equivalent to "Roman". We this to describe trees that are a couple of thousands years old or in other words during the time when Roma took over Palestine (Syria, Lebanon, Jordan, etc.)

      Maybe the oldest Olive, trees in Lebanon, but not in the world!. I have seen orchids of olive trees in Israel, that are before Babylon, and are national monument really something else.

    My dad was an American soldier who was seriously injured fighting in Germany in WWII. They sent him to the south of France to be a company clerk because he really could not be in combat anymore. He talked of standing in the south of France and pulling olives off of branches (and eating them) from trees growing in Monaco (off limits to US soldiers in WWII). He never tasted olives before being in the war, but loved them the rest of his life.

      I hope he wasn't eating it right off of the tree, not a single person on this planet does that, because they are incredibly bitter and first need to go through a process of removing that bitterness and/or flavouring. The extra virgin oil extracted from them is another thing, it gets a rounded flavour from that bitterness.

    Brilliant mini-documentary we can call it on Olive oil the most cherished plant right from ancient times. The presenter is an exuberant communicator, with well-researched comments based on history, agriculture, and food chemistry.     Great video. We pick our own olives here on Hvar island in Croatia. It is exactly the same process but just a much smaller scale. This year we picked 280kg of fruit from the 14 trees we maintain and got about 30 liters. Fresh oil is the best!

    I lived in Spain for 5 weeks, and let me tell you...the olives were insanely delicious! Nothing like here in the US! I now purchase my oils only if it's from Spain! Buy Spain Olives and Oil!!

    I just discovered this channel from a family member. You are very underrated and I appreciate the high levels of effort and research put into each and every vid. I can tell you genuinely enjoy doing this. Reminds me of Safiya Nygaard in some ways (I don’t have much frame of reference, so idk if it’s an entirely accurate connection).       The oldest Tunisian olive tree is located at Echraf, a village close to Haouaria. What makes it impressive is that its roots cover a surface that approximates sixteen square meters and its trunk has a six meter circumference. Regarding its age, it overtakes 2500 years. Correct me if i am wrong. After all hope we are lovers of the 13 Godness of Olympus The True, Alithia!

    Wonderful presentation and production about olives and olive oil! I returned from Corsica and learned that the Greeks travelled the Mediterranean and planted olive trees as they travelled. Wild olive trees were present in Corsica but with small fruits.

    I'm planting an olive tree next week grown for 12 years in substrate from a cutting from San Antonio's oldest Spanish olive tree brought here by Franciscan friars in the 1740s. 😊

    A real treat of a video. First watched your 5 tips. Then went on Amazon and bought a fresh bottle. Mine expired 2 weeks ago, as did, turns out, my lemon juice. Planning on incorporating a tablespoon a day on an empty stomach for overall health benefits, heart, cholesterol, brain/anti-dementia potential aid, anti diabetes et al. Meh. I don't think it can hurt unless there is some underlying rare health disorder with the oils. Ever heard of Lorenzo's Oil..the film? Should see that!! Olive oil IS medicinal for sure.. as you said very well. Thanks again.

    I now live in southern Spain and am in my fourth week of curing olives that I have foraged from roadside trees in my area, basically rogue olive trees. This is my first try at it.
    You are so passionate and knowledgeable about the olive fruit, I am convinced that just from watching this wonderful production that my olives will turn out as they should,... Thank you for your positive energy, the world could do with a few more of you👍

    South of Jaen, we had a storm the other night, and the wind floored most of my avocados. I took a large bag to Örgiva, and exchanged it for some fresh olive oil, which I´ve just tried, on a lump of local bread.
    Olive oil has a shelf life of two years, and the oil in the supermarkets is always a year old -- this was my first experience of fresh olive oil and it was very light and fragrant, with a lovely smooth taste.
    Olive trees need pruning regularly, keeping up with my dozen trees is enough for me, the sight of those acres of olives is a bit daunting. Saludos desde Las Alpujarra.

    I think how productors filter the oil makes a big impact too. I am from Jaén (where she was) and I tried olive oil from Morocco and it was totally different. It had small bits inside and tasted more raw in a way because it was filtered less (I was told). It's another interesting way to make it your own way

    I grew up among olive trees in Sylmar (sea of Olives) in the San Fernando Valley in Los Angeles. Italian families would harvest our olives in return for olive oil. I have never since tasted olive oil as aromatic as that. As kids, olives were great sling shot ammo. While our trees were only around 100 years old, many trees in our area were planted by the Spanish and indigenous converts and thus, hundreds of years old.

    By far the most beautiful and educational movie I have seen on youtube about how olives are harvested and olive oil is produced in my opinion. My father was born 80km to the east of Ubeda (province of Jaen), where this movie is shot, which is more mountainous therefore more labor intensive to harvest; resulting in even higher quality of extra virgin olive oil. Living in The Netherlands myself, I have started to import olive oil, to share this healthy product. Thank you for this great documentary!

    I have subscribed to this channel years ago and have watched almost all of their videos (some of them multiple times). It has NEVER disappointed me about its contents, the ways that the videos were produced, Nicole's tone/expressions, research and everything else.     I put olive oil on everything! Baking, cooking, including in place of butter on pancakes and waffles with syrup. My doctor said that olive oil ncreases HDL cholesterol (the good cholesterol).
    "Solo yo!" was awesome spirit.

    This is an excellent video that captures much of the top points of olive oil production especially in Spain. Olive oil just like olives need a curing process. Fresh olive oil right after being produced is very bitter with high levels of unripe tanins most people find unpleasant. Oil needs a minimum of six months before if is enjoyable. For most people's taste 12-19 months after harvest is ideal. Even then the burn on the back of the tongue and grassy flavor can be a bit much even after 12 months. Most bottles sold in southern Europe include a harvest date. This can be deceiving because olives are harvested in late winter and early spring. The harvest often covers December and January. The most committed producers will label the harvest showing both years to make it clear ( ex produced 2020/2021). The great majority of oils sold in the US simply have an expiration date. Generally speaking domestically made oils tend to be bottled much younger and often have all the characteristics of young to very young oil. The concept of virgin and extra virgin oil is really outdated. Extra virgin olive oil must by law contain less than 1% of oleic acid. Modern harvest and processing almost guarantees that oil has much less acid than that. Oleic acid begins building up as soon as the olive is separated from the tree. Before modern processing delays in harvest and esp delays in pressing caused olives to go bad increasing oleic acid build up. Today that simply does not happen. The old press technique has been replaced with rapid centrifuge methods speeding up oil production. In reality there is NO olive oil produced with more than 1% oleic acid and 100% of modern olive oil is extra virgin. What is in fact the biggest variable of poor quality is in the purposeful dilution of pure olive oil with inexpensive neutral vegetable oil like rapeseed oil. The food industry like all industry is plaqued with greed and corruption. The consumer generally get what they pay for. There are many excellent sources of very high quality olive oil if one look outside of the highly marketed producers. Many small family owned producers from Africa and the Middle East make amazing oils at reasonable prices. One overlooked oil region is Palestinian oil. These oils are of immense historical and geopolitical importance and represent truly traditional old world unmolested products that are worth seeking after. Of all olive oils I have tasted the most unique and interesting has been the French oil made by Moulin Cornille. LES BAUX DE PROVENCE OLIVE OIL “LES BAUX” is made from fully ripe black olives that are partially cured before being pressed. This is the most buttery and rich oil made. This and many other amazing oils are imported by the wine importer Kermit Lynch in Berkeley California. Any one interested in great oils should check their imports.     Spain produces huge quantities of olive oil. They invested in intensive olive farming but the best quality olive oil in the world produced comes from the hills and volcanic soils in Italy, no question about it.
