  • Welcome to the Blue Cactus Dairy Goat Ranch! We breed show quality Nigerian Dwarf Goats! We currently have a herd of 26 does and 6 bucks. Our herd is rotationally grazed on our 11 acre homestead in Arizona. We make cheese and soap from the milk we get and we also raise
Kunekune pigs for meat and chickens for meat and eggs. We also keep a large garden year round!

Crystal, I just love you! Thank you for the comment back the other day! It truly made my day to know that even though you are so busy you took the time to message me back. Maybe when COVID gets better you can offer your Fans a trip and visit to your ranch! I would love to lay down and just experience the cuteness of all the babies in the baby pen! And to feed a baby a bottle. It would be the best natural endorphin for someone like me with physical disabilities. A natural, God made source of pain relief! Thank you for posting your videos! Love to watch how you make cheese! Love from Iowa Forever and Always! Tammy Jo 🥰🥰🥰🥰🐐🐐🐐🐐🐐

It’s rustic and handmade with love and passion instead of robotic mechanically factory produced. There are many steps after the rennet coagulates the milk. Those other steps are what make each cheese different. Cutting the curds also allows the whey to release. Have to get the whey out and be left with the curd to make the chees :)

I wonder if there is some sort of cheap beam style torque wrench that could be adapted to your cheese presses so you can tell how much pressure you're pressing?
I have no idea but maybe if you dipped the cheesecloths in the whey between pressings?

That would be awesome if there was! The cloth was already wet from the whey when I initially dipped it. I think it was the multiple layers that did it in.

What gives each cheese the different flavors? I've been watching you do your different cheeses. Is it the temperatures?

Do you use the whey for any cooking?

    • @BlueCactusDairyGoats

I've honestly never used the whey to cook with. It usually goes to the pigs or chickens. It's great to make Ricotta cheese with too!

  • @Thea_MojaveOutliersWhipmakers

...hmm...it looks like the cheese cloth you like is (also known as) "flour sack cloth?" It's heavier and has a finer weave? Did that cloth come with the kit, or did you buy it separately?

Love your videos ... and your cheese, damn i would love to have one fresh goat cheese 😍
I have no experience in cheese making or with the use of cheese cloth, so i wondered, if it would do any good to use a little whey on the cloth when it sticks to the precious cheese in that way? Anyhow, im glad, that your second cheese seems to have gotten it self back together and doing actually fine. Fingers crossed!

The cloth was wet from the initial dipping in whey. In hind sight, I maybe should have wet it a little more when it was being difficult to peel off. Also, a single layer would have been better.

@@BlueCactusDairyGoats Thanks for answering. 🙂Ah, i couldn't tell from the video how wet it still was. Yes, one layer looked much better.

Oh my goodness three days of milking!! 😲 That’s only for a double batch?? Goodness those 6 girls are good producers.
Hmmmmm have you made cream cheese? Or did I miss that video. Does cream cheese made from goat milk taste the same from dairy milk cream cheese? Sorry random thought that popped out of my brain. Hahaha
Love the kitchen shows you added in I am learning a heck of a whole lot. Maybe once this hurricane Douglas passes Hawaii I will have to make a trip to the Surfing Dairy goat farm to get some goodies.

Where are you getting the recipes for your cheeses?

Hi from TX. I made Jack cheese today and I too managed to have the curds stick to my butter muslin. Not happy!! But an idea occurred to me...My press is not like yours, yet it is -- in that, I do not have weights either, just have to squeeze until I 'feel' like it is right. Wondering if we are squeezing too tight too quickly and causing the curds to be squished in the muslin. Any thoughts?? Cause those squished curds in the muslin is a real pain to clean!! Obviously, not my first.

Is there a less time consuming recipe, or method to cheese making?

    • @BlueCactusDairyGoats
      @BlueCactusDairyGoats  Před 3 lety +1

Not for hard cheese. There are a lot of recipes we have videos on that are not so time consuming but none are a hard cheese. You have to put in the time and love for those bad boys :)
