But seriously, nice offset! Heavy doors is what sells most of my customers. Most started their offset search at a big box store and we all know what their quality is! So when they feel the heft of a 1/4" door, it screams quality. Thanks for the walk thru! 🔥🔥🔥

One that’s 3/8” thick is really heavy!
Nice show. Good consistent temps. Every design has its good and bad. Off sets have that real-estate at the fire box area your going to loose because of heat. That's where I place a big water pan to help reduce the extreme heat and add some additional mass for temperature steadiness and also add moisture to the cook chamber. I'm hoping you do a video on your first cook. It's a long way from your Pecos,enjoy. 😁👍🔥

I'm about to tow my smoker from Texas to Michigan. Did you have to use a temp tag when towing it? Also, how bad was the tralior sway?
I didn't use a temp tag. Just had the bill of sale. Very minimal, if any, sways. Towed almost flawlessly. What smoker are you getting?
As for a probe port - just get a step bit and drill hole between the two therms on the middle and install your own probe port - I have done that for a few of my smokers - very easy

No, you didn't miss it. I forgot to mention it. The tank thickness is 5/16"
Comparing the two smokers you have, which one do you prefer? Build quality and temp management between the Big Phil and Mill spec. Thanks man they are both in my short list.
I like them both! Build quality goes to MS. Temp management is great on both. Runs differently, but no issues whatsoever. I'll do a comparison soon

I heard you say the firebox was a 250 which is 30” in diameter but how long is the firebox? (I’m building my own and that’s what size I’m using but I can’t decide how long to make it.

Which do you like better the 250 or 500? What are the differences from the 2 that sticks out the most?
Depends on the need. Like em both about the same. The most difference is the obvious, which is size, which affects fuel consumption and the way they run.

That firebox is fully insulated? Are you getting good blue smoke?
Yes, fully insulated. You can get clean, dirty, or any kind of smoke you want depending on how you manage the fire.
FYI... I sent you some info on messenger about installing easy probe ports that are small, look good, and you can run three (3) wires through... 😎

Hi Sr I would love your opinion on a 250 versus a 500 I order a 250 from primitive pits but I noticed you bought a 500 I'm still in the in the waiting list and it's coming up but should I change it to a 500 I would love your opinion on the matter
What size tires does the smoker have?
Cool smoker but after I heard you say they wouldn't put a E port for you thats a hard pass for me, pretty ridiculous they couldn't add a simple thing on a 20k smoker and the fire box door seems to have a flaw if the ground isn't 100% leveled.
There's no reason to use expensive tallow to season the smoker. All seasoning is doing is the same thing you'd do with a cast iron pan; create a protective coating to prevent oxidation (rust). Olive oil spray cans are cheap and work well.
True. I make my own tallow from my brisket trimmings and have a ton just lying around.

Hey Fik - I'm a little late to this but was curious as to why you didn't have Big Phil build you a 500? I am looking at getting the 250 from him and wanted to know your thoughts.
I wanted the 500 on a trailer that wouldn't drag on my sloped driveway. The firebox on Phil's 500 trailer design seems to hang too low for me.
I'm looking to purchase a smoker...how you like ur so far...how long did you have to wait..

It's a passenger side orientation, which is unconventional, but I wanted it this way to fit my driveway better.
@@fikscue I ordered my 500g passenger side too in case I ever park it on the street I can access it from curbside. I chose Primitive Pits in Georgia. Did you consider them at all?

Mill Scale had way better communication with me during the process. I also like MS design over FS.

Tallow is rendered beef fat. Like lard is from pig fat.
No point spraying the fire box. Fire will just burn it off. Get way to hot in that box for grease or oil to survive. No cooking oil will survive 8-900 degrees.

But, i also understand going the extra mile to take care of something you just spent a gazillion bucks on too. Im a fabricator, I build trailers, either from scratch or rebuild them back to their factor luster. With that said i have been batting the idea around of building smokers. Ive built a few in my welding career i just never thought the demand would ever be high enough to just focus on them. I just cant imagine there being a calling for that many commercial size smokers. Ive got one im working on now. Im designing a deflector to stop the hot spot and adding a water tank basically inside at the top of the fire box for steam hydration. Proto type. I would let you know how it turns out but i dont know how to post pictures here.

You got the wrong pit if you plan on being inside a lot while you are smoking. Let me know when you want to resale it.
There's more to our operation than just smoking the meat. I'd say at least 75% is done in the kitchen.

@@fikscue 20x50 elevated straight back with warmer on a modified trailer. Thing is over kill for my needs but no regrets.
I like the curbside access. 90% of these builders put the doors on the street side or the driver side of the truck. Why? If you ever do any catering with it and there's a sidewalk involved, do you want to stand in the street or on the sidewalk?
Not sure why that's the norm, but I requested passenger side doors due to my driveway location and for the curbside access too.
How do you get all the water out?
