SOFT Fruit Cream Buns From Scratch! | マリトッツォの作り方 | Maritozzo recipe

  • In today’s video, I’m sharing how to make cute fruit cream buns made with soft milk bread, mascarpone whipped cream, and some fresh fruits. Let's make all from scratch, starting from making the bread!; It is delicious even without the cream, simply with a coffee in the morning☕️☀️

    🍰 INGREDIENTS FOR THE BUNS:
    • Bread flour: 300g (10.6oz)
    • Granulated sugar: 50g (1.76oz)
    • Salt: 5g (0.18oz)
    • Orange zest: 1 teaspoon
    • Dried yeast: 5g (0.18oz)
    • Milk (warm): 170g (6oz)
    • Egg: 50g (1.76oz)
    • Butter: 25g (0.9oz)
    • Beaten egg: just a bit as an egg wash!
    Fermentation: until it rises up to 2.5-3 times bigger.
    Bench rest: about 10 mins
    Proofing: until it rises up to about 2 times bigger.
    🔥 BAKE at 185-190C (365-375F) for about 8-12 mins depending on the oven.
    * Make sure not to over-bake to keep it moist!
    🍰 INGREDIENTS FOR THE WHIPPED CREAM:
    • Heavy cream: 400g (14.1oz)
    • Granulated sugar: 40g (1.41oz)
    • Mascarpone: 133g (4.7oz) (1/3 amount of heavy cream)
    * If you can not get mascarpone cream, you can make regular whipped cream with just heavy cream and sugar!

    The first bread dessert tutorial!🤗🙌 Hope you'll enjoy! Enjoy this freshly baked buns as is without the cream also - I made it fluffy and soft by adding a lot of liquids but it also has some body in texture and is rich in flavor by adding ingredients such as butter, milk and egg. This dough is very sticky but no worry, just keep kneading and it will eventually start coming together😁 Just keep kneading until you can see the gluten web!

    i was a baker for 40yrs but a long time ago i rember making sour in a wooden barrell last thing to do making kaiser rolls by hand all bread by hand rolling in butter for danish and pufpastry no sheeters then so i really appreciate your show you make beautiful pastries happy i found you

    Tried ur recipe turned out so delicious and fluffy I did not add the orange 🍊 zest just because I wanted to taste the bread flavor on its own I did this without the stand mixer just kneaded by hand for 30 min it turned out amazing 🤩

    Thanks for sharing it. Looking this later I decided to make Maritozzo based on your recipe. I made my Maritozi based on brioche recipe and the breads were rich and yellowy as it contained more eggs and butters but not that softs as your ones.

      Mine is a convection oven with a fan and used the temperature listed in the description box!

    They might be enhanced more if you included something like a thick strawberry jam/jelly, caramel sauce and orange liquor to the buns. There is a large amount of cream and I think a sweet sauce might cut through that.

      Thanks🙏 If the room is very hot, I recommend to store in a fridge until you serve them. The bread itself tastes even better in room temperature though💦 may need to pick a happy middle?😁

    After you fill the bread with cream, do you put it in the fridge? Will it stay soft and fluffy?

      It is still soft but definitely fluffier in room temperature since it contains some butter. I ate it after being chilled!

      You can actually omit mascarpone and add the same amount of heavy cream. Or you can try cream cheese even though the flavor is much stronger.

      Just cream cheese might be too heavy I think, but you could replace it with mascarpone if you want!

      If it gets very stiff like butter, it might means you over whipped it. Try to whip until it gets fluffy. Once it reaches out of that zone, they get separated quickly, so watch closely in the end.
      And I typically like to use heavy cream with about 40-50% fat content. Heavy whipping cream works as well!

    It's a crime that a pastry chef could be as slender as you are. I have a penchant for flavored cheesecakes (flavored syrups used as part of the sweetener) and two or three times I have to go into a total "keto" mode just to keep my weight within sight of where it should be. (deep sigh)....

      Thank you😅 I eat a lot when I really want to! I only drink water and black coffee almost always, that is probably helping to adjust my calories!
