This video is a first time cook with the Kamado Joe that I won from the Man Cave Meals "Summer Burger Blast" video contest! I am super impressed with this Kamado Joe! I ramped the heat up to 600 degrees F to cook the steaks, and then just a short 30 minutes later, I was able to bake some incredible bread at 350 degrees F, and it held that temperature through the entire bake, with out deviating what so ever! The bread is for an upcoming collaboration video that will be featured on the SmokeyGoodness CZcams channel, very soon. If you are not currently subscribed to SmokeyGoodness, then I would follow this link, and subscribe now to watch this upcoming video, as well as a host of excellent video recipes already on this channel! / smokeygoodness

Thanks Paul! I'm loving it man!
Thanks! I'm so stoked over this Kamado, and can't wait to use it again :D
Thank you, and I love the GrillGrates! Not only do they give great looking grill marks, but with the design, it allows the drippings to drip right below the steak where the drippings are then atomized right back into the steak for awesome flavor. My first time using them was on this cook, and yeah, for a rare to medium rare, there is really no need to go to the indirect heat, but I was mainly wanting to show how easy that is to do, even though my steaks were just a tad over what I normally do.
I love the detail man. From setting up to seasoning the whole thing. Awesome video and I’m about to try it just like you! Thanks
Very awesome.. Congrats on your Kamado Joe.. Thank You for sharing
Thank you, and thanks for the info on the cast iron plate. I didn't know that :)
Congrats Rus you deserve it can't wait to see you do some long cooks on it. I know what ever comes out of your Kamado is going to be tasty.
Thank you, and I can already see where the Kamado Joe is in an elite league of it's own! Awesome!
Congrats on winning Kamodo Joe. I've had mine for 6 months and I absolutely love it. You'll cook some amazing things on that.
That is pretty wild! We were both thinking steaks on our first cooks with the new grills! Thanks so much :)
Thanks Kathy, and yeah, I never thought I would fall in love with a "Joe", lol
Thanks Michael! I love this Kamado Joe! I'm so looking forward to seeing what all this beast can do, and I have a feeling, there is nothing I can't do on it :D
Congrats on the new Kamodo Joe! I have a Primo XL Oval & you're going to absolutely love how the ceramic grills cook slow n low. Especially when it's 30 degrees outside!
Thanks Rob, and man, I'm gonna have so much enjoyment with this Kamado! I've seen the Primos in a few videos. I love the look of them! I've heard that about the Kamado, that weather and outside temperature doesn't effect them. That is a huge plus!! :)
Thanks Joe! Man that sizzle was music to my ears ;)
Rus that's a beautiful kamado you won(and deserve), excellent first cook and I can't wait to see all your videos to come!
Best grill ever. Everything comes out juicy and moist.
Yes it is! Just awesome! It is definitely an early Christmas for me :D
Cooked just the way I like it! Looks awesome!
Beautiful beef and grill Rus!!
Great looking steaks! I cant wait to see your future Kamado Joe videos...you are a natural.
Love it, can't wait for more videos...
Thanks! Steaks were excellent :)
Thank you, and I really appreciate you subscribing. I'm really excited about this kamado, and look forward to doing a lot of new videos featuring it, and all the great food that it will cook. I am beyond impressed with it! :)
Thanks John, and many more to come, lol! Man, I just looked to see how much charcoal I used on the steaks and the bread, and it is still above the vent holes in the fire box! I didn't put a dent in that charcoal! Unbelievable! I probably could have already owned one of these with all the charcoal I've burned up in the past with other grills :)
Thanks Angie, and yes, those steaks were wonderful! I love the Kamado Joe, and those GrillGrates are just awesome too! I'm still stoked about winning all of this :)
Thanks Joe! I'm really loving this Kamado Joe! Just an amazing product! I love my pepper grinder man! It works better then any that I had before it. Steaks were fantastic! Those GrillGrates really are a great thing! Not only do you end up with great looking grill marks, but the flavor is very intense because of the fat exploding onto the grate and steaming right back into the meat! They were more medium color, but you really could not tell by eating them! Tender and full of flavor :)
I 100% agree with your use of cayenne pepper, I also use It on nearly everything I cook.
Fantastic first cook - I could just about hear the sear from here!
Looks awesome Rus! One cook down... hopefully a few more to go!
I used B&B in this cook. I'm impressed with this charcoal as well. I found a local dealer for Kamado Joe, so I'm going to be trying their lump as well.
Thank you Idle, and it certainly was a wonderful prize! I still can't believe I won it, but I'm sure glad I did ;)
BTW, the video is great! I get hungry every time I watch your stuff.
Sidney Hammons II Thanks, I appreciate that :)
Congrats on the nice win
Thank you, and there will be lots more :)
These Kamado grills just rock.
Thank you Troy, and man those steaks were freaking awesome brother! Very tender, juicy, and slap full of flavor! I could go for one right now, myself ;)
Thank you, I normally like a little more on the rare side, but you could not tell the difference on these steaks. Very juicy and extremely tender :)
Wow Rus that's a mighty fine piece of equipment you got there, and it's well deserved. Hope you enjoy it for many years to come. The steak looks delicious Thumbs up Bro!!!
'Well Done' on your first cook. Congrats again!
A well deserved prize brother! The steaks (and the shirt) looked great! Hadta' watch this when I noticed the email. Now, off to bed... Been working back to back 12 hour days... SUCKS!!!! Cheers Rusty!
Hey, thanks for the video. I just got my first kamado Joe today and cooked these steaks as my first grill. One word - "wow"! This grill is going to be busy this summer.
Your welcome and thanks for watching. This is a older video of mine. I've used mine many times in other videos, and it's one of my favorite grills/smokers. Your really going to enjoy it!
Rus your new grill kicks butt! I know you are enjoying it. Awesome looking steak Yum!
NIce cook on the new grill
Very cool new rig!
Thanks Gary! I thought I would ease into this thing, lol :)
Those steaks look fantastic Russ. Nice marks on them and I love cayenne pepper too it goes in everything I eat practically as well as Sriracha as you know. That kamadoJoe is awesome, what a fantastic prize to win. Your gonna have heaps of fun cooking up a storm.
Oh My Goodness!! New Toy!! Have fun and let us see more please and Thank You. That Steak was just right for me.!!!
Thanks Thomas, and man yeah, I'm gonna be doing some long low and slow for sure, along with a lot of other things, and I know already that this Kamado Joe is going to deliver the best taste ever! :)
Thanks Joe, and I think I'm all ready addicted after my first time firing it up! My charcoal bill is going to be cut 2/3 thirds by using the Kamado Joe, not to mention the high quality cooks that it produces.
Dude you must be so stoked with such an awesome prize package!
I'm sure I haven't congratulated you properly so I'd like to extend a Laurel, and Hardy handshake and wish you much joy with your new toys!
You now have much to learn and experiment with and doncha know it'll be a fun journey!
The steaks look great, and I see John included some of those flies that seem attracted to Kamado cookers...but as John says, they probably don't eat much!
Cheers!
Looks incredible! Love me a medium rare ribeye of the grill. Now I need some steak. Lol
My kind of cook Russ. Great looking steaks.
I pick mine up tomorrow. Can't wait. Thank's for the suggestions.
That is great! Your going to love it!
Smoky Ribs You might know this already. If not it would be good information to share with others. When I started shopping the Joe Classic I found that a lot of stores were selling an older version. The only structural difference between the two is the newer one has a built in ash trap with handle in the bottom vent to make it a little easier to remove. The older verson sold for $849(I'm sure that fluctuates slightly with location), and the newer one was $949. The MAIN difference is the newer one comes with the heat deflector, grill expanders, and firebox seperator allowing to only use half the grill(I kind of dont understand the point in this one). If you price these out it is a much better deal to get the new one that is $949-$999. Also, I got mine at ACE Hardware and their price was $999. Howerver, they honored the $949 price that was available online with free shipping.
The one I have was some where between the older models, and the newer ones. I have the tray with the handle, but they didn't have the newly designed flex grates and split heat deflectors, and separator available at the time I got mine, but I would sure like to get that new system for my Joe Classic. The company recently sent me those HDPE side tables and handle, so hoping they will send the grate upgrade as well, but if not, I will get them sooner or later. I love cooking on mine. I think I'm going to change my gasket out soon. Not leaking any smoke yet, but showing some wear. Sounds like you got a good deal on your Kamado, with everything you got. I know you are going to get a lot of use and enjoyment from cooking on it!
Smoky Ribs I've been testing it for hours. I anticipate a late night. Lol. Keep posting great videos. Your country thanks you! :)
Reverse sear is a great way to do a steak. I thought about doing that on this cook, but I was wanting to experiment with ramping the temp way up for the sear, and then see how long it took to bring the temp back down to 350 and hold, to bake bread, which is total opposite from what I would normally do but. I was very impressed to say the least :)
Rus, I share your amazement, without owning a kamado, but by watching John's videos.
I've always been intrigued at how John seems to have 'never ending charcoal' and when I comment he's always replied as to the efficient nature of the kamado style grills, or perhaps the technique used in fire construction....I'm just saying the man knows how to manage charcoal, and knows his fire.
Nice choice for a 1st cook on the Kamado. Those steaks looked fabulous Rus! I think I may have to grill a ribeye for lunch today! Once again, congrats on the win!
Thank you Brian :)
nice cook. How do you like those aluminum cooking grates? I was thinking about getting them. The steaks looked great, but you may not have needed that last step where you went indirect. Unless you were going for a medium done steak.
Oh My F*ckin GOD that looks amazing! I've been trying to cook a steak with a sear like that for ever! You just made it look so easy. Nice work man.
you should do any update review of the pro's and con's , added on your brought ..and your final thoughts
omg my mouth is watering!!!!! Lol Nice Steak!!!!!!
Thank you :)
Welcome to the very addicting kamado world. Great job on those steaks!
Nice video...nothing like searing the steak and then using indirect heat to finish it. Glad you mentioned that changing the grates weren't difficult. Still debating which ceramic grill to purchase. Kamado Joe seems to be a quality one.
Would be nice to see how easy it is rather than being told.
Thanks Chris :)
I'm more stoked now after using it, then I was when I heard I won it, and I was pretty stoked then, lol! Thanks Randy, and yeah, those little flies don't eat much, so I guess I'll have to let them hang around a little longer ;)
Thanks Tom, and there will be more! Lots more, lol ;)
How crazy is this? Here at Kate's Camp in AZ, the WiseGuy also cooked rib eyes on our newest grill from ManCaveMeals for dinner Sunday and laid down some awesome homemade blueberry pancakes for breakfast on Greg's 'out of this world' fantastic griddle he sent to me from Ballistic BBQ. Congratulations again Rus, on the win as the best and most deserving contestant did just that!
Gotta try cavenders seasoning, you almost can't use too much
Also a mix of garlic salt, sea salt, and chili powder is a fantastic rub for searing steaks
Thanks Larry :)
That's one hell of a prize!
You must be feeling like it's Christmas in September.
Thanks Sal, and yes, I did notice the auto focus, and I should have had it on manual, which I normally do, but I was fighting with daylight, and in a hurry :/ Brother, I am loving this Kamado Joe! Now I know why John and Steve love them so much! Can't wait to fire that bad boy up again :)
Thats a purdy cooker right there! Great looking steaks to devirginize the cooker!!
Awesome Rus. I can see a happy man standing behind that big ass grill!!
You look a bit small though ;)
Thanks Greg, and this shirt looks great on me ;) I've been having to put in some pretty long hours myself lately, but not no 7/12's! Man, that is hard! You will be ready for a vacation after this! I know I am way past due! Cheers brother!
Thanks Kinger! I'll be doing some low and slow soon enough man ;)
Thanks Dan, and man, I just realized something a few minutes ago, after watching this video for the 3rd time, lol! Those GrillGrates really duplicate the Down & Dirty method of cooking steaks! Very little flare ups, and all the flavor bombs drip right below onto the grates surface to make it steam right back into the meat, and the plus side, is the awesome grill marks that it makes! That steak was amazing and yes, cut's with a dull ole butter knife, hehehe ;)
as a new owner of a kamado joe original (off craigslist) this video is still perfect 6 years later
Thanks Ellis, and I can't wait to fire it up again ;)
What was your temp when you put the steaks on the grill? I notice it's only about 400* or less - but I assume that's because you had it open for adding the deflector, etc? Thanks.
Perfect cooking for me chef!
Thank you, I appreciate that :)
What brand of charcoal did you use in video? I've found Kamodo Joe lump charcoal to be very good. Large lumps, noP
Love how you cut er' open with a butter knife at the end Ha! Talk about a nice prize from MCM. Congrats! I see many delicious cooks in your future.
Grooveryder Yeah, I remember that steak well. It was super tender! Yes, it was a fantastic prize to win. I still love it as much as I did when I first got it almost two years ago :)
I just dropped a Boston Butt on the pit this morning at 8am. My first try with this cut. Heard they are very forgiving, so i'm hopeful!
I've been doing a brisket in a Pit Barrel Cooker most of the day. It's been resting for around an hour and about time to start cutting. Video will be up in a few days if you would like to check it out :)
Does it cause a lot of heat once opened above the grill and does it stain anything above it?
And it cuts with a butter knife! The proof is right there, everyone! Congrats on the new "Toy", Rus!
What is the diameter of the grill in the video? I am in the market for buying a kamado style grill but given the space limits I am in between a few different sizes.
My favorite cut of beef. You should get yourself a Thermopen. It's the best 90 bucks money can buy. 2-3 second temp reads. Thanks for the great video.
Olivelimer Mine too! I do have a thermopen. I use it on a lot of my videos. Actually used it today shooting a new video. They are great! Your welcome, and thanks for watching :)
With the Weber, I normally smoked for 20-30 mins then reverse sear later 1 min each side using the chimney filled with hot coal. I would think reverse sear is better but never had a Kamado before so will try this to experiment.
3/4 inch steaks don't require a reverse sear. Searing both sides for around 4 minutes is all you need to end up with a medium rare steak. Thicker steaks like 1-1/2" to 2" need to be reverse seared to get the center where you want it, before searing.
Ok thank you much.
Good lord that sound mmmmmmm
Thank you :)
For how long do you cook this... hours.?
Big Joe owner here, congrats on your new toy. FYI, you need to turn your cast iron plate in the firebox upside down! It shouldn't be smooth side up
Try doing a reverse sear on your Kamodo Joe. Smoke first to desired temp, then raise Kamodo temp up to 600 and then sear steak. When I did this with Montreal Steak seasoning, it was best steak I've ever had.
with the "divide and conquer" cooking system on the newer Joes, you don't have to reconfigure. Just set it up with one 1/2 on the lower part and the other half on the higher setting with 1/2 of the heat deflector under it in the low position. Now that I read this, it sounds confusing, but its really simple.
+dahveed284 I've seen it done many times by John Setzler, I have a new Big Joe on the way
killer looking steaks. You deserved that new grill!!!!!!!!!!!!!!!!!!
pingstick Thank you, I appreciate it :)
Amazing! Wonderful! did you notice the smoke was messing with the auto focus on the camera? I made rib eyes on Sunday, and reverse sear is the way to go.Next time. And I can't wait to see the bread! I put salt and pepper on my old ladys steak and Slap Ya Mama on mine. A little bit of cayenne is the bomb! Nice Cook Rus, and I know that big red beast is going to bring you hours of enjoyment ! Cheers!
nice 👍👍👍
2019 still useful video
Thanks K-Ray! Kamado Joe is my new best friend, and we shall be friends for a very long time ;)
