    This video is a first time cook with the Kamado Joe that I won from the Man Cave Meals "Summer Burger Blast" video contest! I am super impressed with this Kamado Joe! I ramped the heat up to 600 degrees F to cook the steaks, and then just a short 30 minutes later, I was able to bake some incredible bread at 350 degrees F, and it held that temperature through the entire bake, with out deviating what so ever! The bread is for an upcoming collaboration video that will be featured on the SmokeyGoodness CZcams channel, very soon.     Thank you, and I love the GrillGrates! Not only do they give great looking grill marks, but with the design, it allows the drippings to drip right below the steak where the drippings are then atomized right back into the steak for awesome flavor. My first time using them was on this cook, and yeah, for a rare to medium rare, there is really no need to go to the indirect heat, but I was mainly wanting to show how easy that is to do, even though my steaks were just a tad over what I normally do.

    Thanks John, and many more to come, lol! Man, I just looked to see how much charcoal I used on the steaks and the bread, and it is still above the vent holes in the fire box! I didn't put a dent in that charcoal! Unbelievable! I probably could have already owned one of these with all the charcoal I've burned up in the past with other grills :)

    Thanks Joe! I'm really loving this Kamado Joe! Just an amazing product! I love my pepper grinder man! It works better then any that I had before it. Steaks were fantastic! Those GrillGrates really are a great thing! Not only do you end up with great looking grill marks, but the flavor is very intense because of the fat exploding onto the grate and steaming right back into the meat! They were more medium color, but you really could not tell by eating them! Tender and full of flavor :)

      Smoky Ribs You might know this already. If not it would be good information to share with others. When I started shopping the Joe Classic I found that a lot of stores were selling an older version. The only structural difference between the two is the newer one has a built in ash trap with handle in the bottom vent to make it a little easier to remove. The older verson sold for $849(I'm sure that fluctuates slightly with location), and the newer one was $949. The MAIN difference is the newer one comes with the heat deflector, grill expanders, and firebox seperator allowing to only use half the grill(I kind of dont understand the point in this one). If you price these out it is a much better deal to get the new one that is $949-$999. Also, I got mine at ACE Hardware and their price was $999. Howerver, they honored the $949 price that was available online with free shipping.

      The one I have was some where between the older models, and the newer ones. I have the tray with the handle, but they didn't have the newly designed flex grates and split heat deflectors, and separator available at the time I got mine, but I would sure like to get that new system for my Joe Classic. The company recently sent me those HDPE side tables and handle, so hoping they will send the grate upgrade as well, but if not, I will get them sooner or later. I love cooking on mine. I think I'm going to change my gasket out soon. Not leaking any smoke yet, but showing some wear. Sounds like you got a good deal on your Kamado, with everything you got. I know you are going to get a lot of use and enjoyment from cooking on it!

    Reverse sear is a great way to do a steak. I thought about doing that on this cook, but I was wanting to experiment with ramping the temp way up for the sear, and then see how long it took to bring the temp back down to 350 and hold, to bake bread, which is total opposite from what I would normally do but. I was very impressed to say the least :)

    Rus, I share your amazement, without owning a kamado, but by watching John's videos.
    I've always been intrigued at how John seems to have 'never ending charcoal' and when I comment he's always replied as to the efficient nature of the kamado style grills, or perhaps the technique used in fire construction....I'm just saying the man knows how to manage charcoal, and knows his fire.

    nice cook. How do you like those aluminum cooking grates? I was thinking about getting them. The steaks looked great, but you may not have needed that last step where you went indirect. Unless you were going for a medium done steak.

    Nice video...nothing like searing the steak and then using indirect heat to finish it. Glad you mentioned that changing the grates weren't difficult. Still debating which ceramic grill to purchase. Kamado Joe seems to be a quality one.

    How crazy is this? Here at Kate's Camp in AZ, the WiseGuy also cooked rib eyes on our newest grill from ManCaveMeals for dinner Sunday and laid down some awesome homemade blueberry pancakes for breakfast on Greg's 'out of this world' fantastic griddle he sent to me from Ballistic BBQ.     Gotta try cavenders seasoning, you almost can't use too much
    Also a mix of garlic salt, sea salt, and chili powder is a fantastic rub for searing steaks

    Thanks Dan, and man, I just realized something a few minutes ago, after watching this video for the 3rd time, lol! Those GrillGrates really duplicate the Down & Dirty method of cooking steaks! Very little flare ups, and all the flavor bombs drip right below onto the grates surface to make it steam right back into the meat, and the plus side, is the awesome grill marks that it makes! That steak was amazing and yes, cut's with a dull ole butter knife, hehehe ;)

    What was your temp when you put the steaks on the grill? I notice it's only about 400* or less - but I assume that's because you had it open for adding the deflector, etc?Thanks.

    With the Weber, I normally smoked for 20-30 mins then reverse sear later 1 min each side using the chimney filled with hot coal. I would think reverse sear is better but never had a Kamado before so will try this to experiment.

      3/4 inch steaks don't require a reverse sear. Searing both sides for around 4 minutes is all you need to end up with a medium rare steak. Thicker steaks like 1-1/2" to 2" need to be reverse seared to get the center where you want it, before searing.

    Big Joe owner here, congrats on your new toy. FYI, you need to turn your cast iron plate in the firebox upside down! It shouldn't be smooth side up

    Try doing a reverse sear on your Kamodo Joe. Smoke first to desired temp, then raise Kamodo temp up to 600 and then sear steak. When I did this with Montreal Steak seasoning, it was best steak I've ever had.

    with the "divide and conquer" cooking system on the newer Joes, you don't have to reconfigure. Just set it up with one 1/2 on the lower part and the other half on the higher setting with 1/2 of the heat deflector under it in the low position. Now that I read this, it sounds confusing, but its really simple.

    Amazing! Wonderful! did you notice the smoke was messing with the auto focus on the camera? I made rib eyes on Sunday, and reverse sear is the way to go.Next time. And I can't wait to see the bread! I put salt and pepper on my old ladys steak and Slap Ya Mama on mine. A little bit of cayenne is the bomb! Nice Cook Rus, and I know that big red beast is going to bring you hours of enjoyment ! Cheers!
