    Ragi pancakes/uttapam are a healthy breakfast option as they are made primarily from ragi flour, which is rich in nutrients. Ragi is a good source of dietary fiber, calcium, iron, and other essential minerals. It is also gluten-free and has a low glycemic index, making it suitable for people with gluten intolerance or diabetes.
    Ingredients:
    - 1 cup ragi flour (finger millet flour)
    - 1/2 cup semolina
    - 2 tsp gram flour (besan)
    - 1 cup water (plus a little more for adjusting consistency)
    - 1 tsp cumin seeds
    - 1/4 tsp hing (asafoetida)
    - 1 tsp salt
    - 1 tsp ginger-garlic-green chilli paste
    - 1/4 tsp baking soda
    - 1 tsp lemon juice
    - Assorted vegetables of your choice (e.g., chopped onions, bell peppers, tomatoes, etc.)
    - Ghee (clarified butter) for cooking
    Instructions:
    1. In a mixing bowl, combine ragi flour, semolina, and gram flour.
    2. Add 1 cup of water and mix well to form a smooth batter. Let it rest for 5 minutes.
    3. After 5 minutes, check the consistency of the batter. If it is too thick, add a little water and mix.
    4. Add cumin seeds, hing, salt, ginger-garlic-green chilli paste, and baking soda to the batter. Mix everything well.
    5. Add lemon juice to the batter and mix again.
    6. Heat a pan or skillet and add 1/2 tsp of ghee.
    7. Pour a scoop of batter onto the pan and spread it gently to form a round shape.
    8. Sprinkle assorted vegetables of your choice over the batter.
    9. Drizzle a little ghee on top.
    10. Cook for about 2 minutes on one side, then flip it over and cook for another 5 minutes, or until both sides are golden brown and crispy.
    11. Once cooked, remove the pancake from the pan.
    12. Repeat the process with the remaining batter and vegetables.
    13. Serve the ragi pancakes hot as a healthy breakfast option.
