The reason why the fishballs were more salty before was because refrigeration wasn't that great in the past.... So the fish balls would go bad rather quickly if the salt content was not high enough. It could go bad within hours. Obviously we don't have that problem anymore, hence the lower salt content.

I remember there is a Fishball stall that serves fantastic fish dumpling as well. But that was in the 1990's, I think closed for awhile coz I couldn't find their stall at the same location (before the renovation)? apparently business was so good that they don't open on Sundays coz the boss said he needed to rest.
where was it when you ate it?
the old stall was along the first roll, nearest to the carpark. tired this stall after seeing your review. the fish balls were not too salty for my taste. was eyeing the orh luak while waiting for fish ball stall to open. but was alone so couldnt finish the 2 dishes, just stuck to noodle.
