You can later increase your storage by using external nvme SSD and enclosure which is very cheap in comparison with Apple price

No. M1 works best with max full HD video editing. On 4k videos it starts giving lags while editing.

More ram is always better. If you are a professional video editor/creator then high disk speed matters. If you are a developer then more RAM should be a priority.

macbook will easily will help with all of your office work; i would recommend save your money and get the m1 because even M1 chip won't be used at it's peak performance; one of the best laptops for office work
