Simple Crispy Skin Roast Pork Belly recipe: Two Ingredients Only

  • This is a super simple crispy roast pork (siew yoke) recipe that only has 2 ingredients: salt and hoisin sauce! Can you believe it? You don't have to pour boiling water over the skin etc. It's literally marinating the meat over night in the fridge, and putting it into the oven. This is a lazy cook's dream :)
    In this recipe, the pork belly is 1.7kg. You will need to adjust accordingly to your slab of meat.
    Ingredients
    1.7kg pork belly (female pig preferred)
    2.5 tbsp salt
    3 tbsp hoisin sauce
    Method
    Night before
    1. Wash pork with water
    2. Pat dry completely with paper towel
    3. Put pork on baking tray lined with 2 sheets of foil
    4. Stab pork skin all over with knife or score pork skin diagonally (stabbing is easier than scoring as the skin is very thick).
    5. Turn pork over and rub hoisin sauce all over the meat side only. Approx 3 tbsp.
    6. Turn meat over and rub salt all over pork skin. Be generous. Approx 2.5 tbsp.
    7. Cover loosely with foil and keep in fridge overnight
    The next day
    1. Remove pork from fridge and open foil
    2. Use paper towel to dust off excess salt and dab skin dry it if it’s wet
    3. Preheat oven to 220c
    4. When oven has reached 220c, put pork in oven for 30 mins (depends on your oven)
    5. Then turn temperature down to 180c and bake for another 1 hour 15 mins
    6. Remove from oven and let it rest for 30 mins (or until cool)
    7. Use cleaver to chop (skin side down as it’s easier to chop)
    8. Chop long strips and then pieces
    9. Ready to serve!

    Nic seems like a master chef. I feel hard to try this receipt because the oven after-cleaning workload will be a bit heavy.
