Authentic Chicken Dum Biryani | Family Recipe | Hyderabad Flavours

  • Chicken Dum Biryani (serves 8-10)
    Chicken Dum Biryani is a rice dish, made with layers of marinated meat and partially cooked rice, which is added to a heavy bottomed pot. It is then slow cooked on a stovetop.
    This recipe is split into three parts and is based on Fuzail’s family recipe. However, before you start, first, clean, rinse and soak 8 rice cups of basmati rice in water for about 3-4 hours. Remove skin from drumsticks and make small slits. If using boneless chicken thighs, cut into smaller pieces (set aside). While the rice is soaking, prepare all other ingredients
    Part 1: Chicken Preparation
    • 1 kg skinless drumsticks and chicken thigh pieces
    Ingredients for chicken marinate (masala)
    • 1 tbsp red chilli powder
    • 1 tbsp coriander powder
    • 1 tsp cumin powder
    • 1 ½ tsp turmeric powder
    • 1 ¾ tsp garam masala
    • 2 tsp salt
    • 3 tbsp ghee
    • 2 tbsp warm milk mixed with 1 pinch saffron (set aside, only use half for marinade)
    • 9 tablespoons yogurt (approximately half cup)
    • 2 tbsp ginger garlic paste
    • 2 bunches coriander leaves & stalks (chopped, only use half here)
    • 2-3 stalks chopped mint leaves (only use half here)
    • 2 tbsp fried shallots (or onions)
    Whole spices
    2 star anise
    3 cardamoms
    2 bay leaves
    1 inch cinnamon stick
    8 peppercorns
    4 cloves
    Method
    1. Heat 3 tbsp ghee in heavy pot
    2. Add whole spices
    3. Sauté spices until fragrant
    4. Add spice powders and salt
    5. Sauté until evenly mixed
    6. Add plain yogurt and mix in
    7. After mixing evenly, add half the saffron milk (save half later)
    8. Continue sautéing until the ghee separates from the spices
    9. Off flame, remove pot from stove and let it cool for few minutes
    10. Add cleaned chicken into cooked spices
    11. Mix evenly
    12. Add half the chopped coriander and mint leaves
    13. Add fried shallots and ginger garlic paste
    14. Marinate in fridge for 2-3 hours (preferably overnight)
    Part 2: Rice Preparation
    • 8 cups basmati rice (soak in water for at least 3-4 hours before cooking)
    • 2 bay leaves
    • 2 cinnamon sticks
    • 3 cardamom
    • 2 star anise
    • 2 cloves
    • 3 small green chillies
    • 8 black peppercorns
    • 4-5 tsp salt
    • 4 tbsp ghee (clarified butter)
    • Saffron milk (the remainder from Part 1)
    • 2 - 3 tbsp fried shallots
    • Chopped coriander leaves (the remainder from Part 1)
    • Chopped mint leaves (the remainder from Part 1)
    • 2 tsp rose water (kewra essence)
    • Orange colouring (optional)
    Method
    1. Drain soaked rice and set aside
    2. Add 1 tbsp ghee, whole dry spices and green chillies in large pot of water to boil.
    3. Add all the rice and salt to the boiling water. Boil until the rice is 50% cooked
    4. Remove the rice from fire and drain in colander.
    Part 3: Layering the meat and rice
    1. Remove marinated chicken from the fridge
    2. Warm the chicken slightly over the stove and then off fire
    3. Add some fried shallots
    4. Add 1/3 of the half cooked rice in the pot and spread evenly
    5. Sprinkle some chopped coriander and 1 tbsp ghee
    6. Layer another 1/3 of the rice, sprinkle chopped coriander leaves and 1 tbsp ghee
    7. Add remainder of the rice, sprinkle chopped coriander, 1 tbsp ghee
    8. Drizzle the saffron milk, rose water (kewra essence), orange colouring (optional) and remaining fried shallots
    9. Create ‘dum’ by covering and sealing the top of the pot with foil
    10. Fold the foil up to cover the edges of the lid
    11. Put on medium - high heat for about 7 minutes.
    12. Lower fire and simmer on low flame for 45 minutes.
    13. Open lid and mix the rice well
    14. Serve on a plate with lemon wedge and raita
    15. Garnish with mint leaves (optional)
    16. ENJOY!

    It's so tasty, mouth-watering. I am wondering if I can use rice cooker to do the final slow cooking step:) Will try it one day!

      I think that you can definitely do a cheats way with the rice cooker 😅 but then you have to reduce the water to the rice cooker ratio! Will you try making this dish?
