    In this video, we show you an Easy Eggplant Pakora Recipe. Eggplant, which is also known as Aubergine, Brinjal or Baingan (in the subcontinent) is a very versatile vegetable that can be used in many ways. Here we show you How to Make Baingan Ke Pakode which are Vegetarian Aubergine Fritters. These Eggplant Fritters (Baingan ka Pakora) have a delicious and spicy soft center, with a crispy outer coating.     To make the Baingan Ke Pakode (Aubergine Fritters) you will need:
    Step 1: Eggplant
    1 large eggplant
    salt to taste
    1/2 tsp Kashmiri chili powder
    1/2 tsp turmeric powder
    1/4 tsp carom seeds (ajwain)
    1/4 tsp cumin powder (jeera)
    1/2 tsp chaat masala
    1/2 tsp chili flakes
    1/4 tsp black pepper
    1 tsp coriander seeds
    1 tsp green chili paste (or 1-2 chopped green chilies)
    1/4 cup coriander leaves
    1 tsp dried Kasuri methi
    Step 2: Batter
    1 and a Half cup gram flour
    salt to taste
    1/4 tsp turmeric powder
    1/2 tsp garlic powder
    1/2 tsp baking powder
    1/4 tsp chili flakes
    1/4 tsp asafoetida (hing)
    1 tbs rice flour
    1 tbs cornflour (also called corn starch)
    enough water to form a batter (about 250ml)
    1 tbs hot oil
    oil for frying

    Very tempting! 😋 I’ve never made aubergine pakodas because I think it soaks up too much oil but now may be I’ll try this one day because I just feel like having them.😀
