Persian Halim / Haleem (Wheat & Meat Porridge) - Cooking with Yousef

  • Hi Friends -
    Today we make a meal that is often served for breakfast, or during special occasions. This is a very hearty and delicious meal that you can enjoy anytime, but can really get you going first thing in the morning.
    Halim / Haleem ( حلیم ) is made in many Middle Eastern and South Asian Countries, each using regional recipes and spices. Today, we make the Iranian version of the dish which is rather simple but takes time to prepare.
    Traditionally, Persian Halim / Haleem is made with lamb, and that is what I am using today, but it works with many other types of protein, including Turkey, Beef, and even Chicken.

    I am amazed to find many of my childhood foods on your channel, even though my parents are from India/Pakistan. A lot of cultural exchange happened over thousands of years, these "silk road" cultures have a lot of overlap.

    I made this today and wanted to thank you soooo much!! It tasted very authentic and my family loved it. I used normal wheat and it took around 6 hours to cook down in total. Thank you Mr Yousef!

    I cannot wait to make this! You made it look so simple I always had to wait for family to make it or buy it ( you never know what youre going to get with the store bought haleem). Im going to invite my family over so we can share this meal.

    Amazing food Mr. Yousef! Thank you so much for sharing your recipes with us, it brings me so much joy to be able to cook dishes like this that remind of my days growing up in Bahrain and eating Iranian inspired food cooked by my grandmother.
    I was wondering if you had a recipe for a Sholeh (or Aash) as it is known in Bahrain, which is similar to a Halim (or Harees) but contains chickpeas as well. I would be very thankful to be able to cook something that nostalgic. If I remember correctly this food is prepared during Muharam, as it was always given to us by our Iranian neighbours. Thanks again, you are a legend!

    For Persian Haleem, Wheat germ (best in terms of minerals, vitamins, anti inflamation qualities) or barley is the best. If lactose intolerance, use lactose free milk. No meat is vegeterian. To add sugar for breakfast version, shredded turkey is the best.

    I love to taste new things so i often go to shops that sell foreign food.
    Often i just buy things i have never seen before and i have no idea what it actually is.
    That is when i have to go to CZcams and search the name of it.
    This time i had a box of Halim, but did not know if it was food or desert.. lol

    This looks so good! It has some similarities with one dish made in Morocco but they do it without the meat. I am definitely going to try it. Please do Ghormeh Sabzi. I love Iranian cuisine 💗 thank you for your efforts!

    Dear Yousef, this food is originally came from Armenia and it calls HARISA. It’s really interesting that you almost gave every countries name in Middle East except the original country name Armenia.

    Uzbek haleem is better, it takes 13-14 hours to prepare

    This would be nice without the red meat and more heart-healthy, looks like a very medieval winter dish and the idea of a meaty cereal is just weird.

      Your bullshit recipe is for your taste only. We Iranians keep our traditional dishes recipe intact and meaty. This is not cereal crap you fed up with in N. America.
