I've hated tomato skin when having fresh tomato on anything. My solution to my liking: blanch scored tomato in hot water for a bit and then plunch in ice water; easily pull skin off and.....I'm a happy man!
I'm so glad that you found a way to enjoy fresh tomatoes without the skin! Blanching tomatoes is a great way to remove the skin and preserve the flavor of the tomato. It's also a quick and easy process.

I don't really like tomatoes on their own, but when seasoned with salt, basil, crushed garlic and olive oil infused with garlic, it's like a different vegetable altogether. I discovered bruschetta around a half a year ago, and thought to myself - "this might be good, I want to try it". Since then, it's been my favorite food that uses tomatoes 😂 I actually often eat it as breakfast, albeit I add mozzarella to it.
My advice - if you don't like vegetables, it may be because you are eating them plain and unseasoned. Vegetables virtually never taste good like this. Use seasonings, herbs, garlic, anything that you like that might enhance their taste.
