You have to VERY QUICKLY run and cut off a line of dominoes, so that the crashing doesn't ruin the whole set. Then, you just have to rebuild that SHORT line. Otherwise, I see a few "domino athletes" committing suicide, lol
You obviously do these in sections and then link them together later. The closer you get to the last link, of course, the riskier it gets, but at least you ultimately reduce the ongoing risk.

I cant' even imagine how much work was put into setting this up. Last time I played dominoes was back in primary and after setting it up with a length of three school desks, someone accidentally touched one of the dominoes and 80% of our work got destroyed. It must've been an incredibly careful work yet done by a large group of people.

Well, London Bridge has been falling down in a children's rhyme for a very long time, so I think this was intended as a reverse play on that idea. Note that the trigger dominoes for Tower Bridge run around the back out of sight. This may have been intentional to hide a planned gap.

Matthew Bishop They don't remove anything during setup. That would be really risky, when someone fumbles while putting in the missing piece.
They usually have tiny fences for every section, which can be lifted without knocking over any pieces.
Well, I don't know how they did it in this specific attempt.
Edit: in front of every big section, you see a metal plate on the floor. Pretty sure, they can be locked.

Actually that's incorrect. If the setup for the dominos took 70,000 hours that would mean it would take slightly over 2916 days.
If you divide 2916 by 365 ( Amount of days in a year) you would get 7.98 which is almost 8 years and I seriously doubt that this gym was occupied for building domino's for that long!
