Personally, I was never taught to show your back to the opponent, but I know other practitioners like to add twists as it opens up a low sweep or maybe an ankle lock, or a hand strike like what they picture here. That Twisting Tiger with the spiraling hands is actually a very prominent Jackie Chan technique that not a lot of other martial arts actors use. It looks like a blend of Wushu and Wing Chun. It's something I almost always look for in a Jackie Chan movie (he didn't do it in The Foreigner as far as I remember, though).
