I don’t add anything in with my egg mixture but every once in awhile I will cut an olive in half to put on top. They’re very good if you like green olives. I’ve cooked my eggs the same as you for many years. About 51-52 years. Now my son watches these cooks that says to bring them to a boil put a lid on them and set them off the heat. That keeps them from getting that green ring around them. Now he looks at mine like how disgusting 😂😂. He eats them anyway. Yours look great. Thank you for another simple down home recipe. ❤❤I like mine cold too.

I always chop up my damaged eggs small and mix them in the yolk mixture. I like a lot of filling in mine so adding those damaged ones gives me enough filling. I do miss paprika though. I became allergic to it as an adult. 😕 I use dill and pepper on top now. Still yummy.

    Another great video!
Have you ever known anyone say there are enough deviled eggs? Me neither?
I can tell you what to do to make sure everyone gets enough. Well, almost enough.
Do a macaroni or potato salad, 1 lb elbow macaroni, no more, the equivalent amt of potatoes if that's what you're doing, but you have got to boil a full dozen eggs. Make the deviled eggs by usual recipe and instead of stuffing them, chop em up and add to the salad ingredients.
The trick is to use a full dozen deviled eggs to 1 lb pasta to get the ratio right. Deviled Egg Pasta Salad. Yum? Best macaroni salad you ever put in your mouth I promise.
    You're welcome.
If this sounds unhealthy to you, I'm old school Atkins, altho I don't follow it strictly still follow the path that eggs are not our enemy
(Just like butter. Ever heard of Spinach with a Ton of Butter? Put a 1lb bag of frozen spinach in a bowl with a stick of butter, microwave till melted, stir it in and put in fridge. Next day put a stick of butter in, nuke till melted, stir it in and put in fridge. Do this two more times, yes that's a pound of butter to 2 lbs of Spinach. The best spinach you ever ate. And we lost weight eating it!
Keep cookin' and sharin' girl, hope good at it.
    Love you both!
ps. If you gently stir the eggs for a full minute or so right after you put them in boiling water it will center the yolks and make prettier devils.

I love deviled eggs! This is exactly how I make mine but I use dill relish because the sweet relish seems like it's gotten sickeningly sweet nowadays. I don't know if that's just in my mind or if it has gotten sweeter. 😬 Thank you for sharing this recipe with us.

And you're right, fresh eggs won't peel easy no matter what. 😅 My mom always made deviled eggs with dill pickle relish, so that's what we are used to. This is such a great comfort food recipe. I said to someone the other day that I boil mine for 9 mins and they had a fit and said no that's too long! I also put a small crack in the rounded bottom before putting in the boiling water and they peel super easy, and it doesn't matter if they are farm fresh or not peels slide right off.

Tammy, you can peel hard-boiled eggs much faster and error-free without picking up parts of the egg with the shell. First, don't ever use fresh out-of-the-hen eggs because they are near impossible to peel. Regular eggs from the supermarket work fine. Here's what you do:
Boil the eggs starting in boiling water; don't ever start eggs in water that is not boiling at first contact. For hard-boiled eggs I know you are cooking to 12 minutes as I used to, but 15 results in a firmer egg that is much easier to peel, and the firmer texture works better for devilled eggs.
Place the cooked eggs into an ice-water bath that covers them completely and let them get very cold over about five minutes' time. Now roll each egg under slight pressure against the countertop to create a lightly crushed band around the egg, then place them back into the ice bath so cold water can rush into the cracks and help separate egg from shell. If you want to see this done expertly, watch Lucifer (Robert Di Nero) in the film Angel Heart.
Now for the greatest advice of all: roll each egg between your palms with just a little pressure. The shells will separate rapidly and completely. Then place the eggs once again into the ice bath to cool further and perhaps float off any tiny shell fragments.
    **TAH-DAH** !!!!

Deviled eggs were called that because they would put cayenne pepper on them. They were supposed to be spicy. Too spicy for some so paprika was snuck in at some point in time 😂. If you want to be daring try them with ground cayenne pepper instead!

I'll have to disagree with you on that, Molly. All things "Devilled," such as Devilled Eggs or Devil's Food Cake or Devilled Ham (essentially Rillettes) are so named because of their decadence, which in the case of devilled eggs is due to the fat from the yolks mixed with mayonnaise, just like the fat in Devilled Ham (Rillettes) or other devilled meat, which are also essentially Rillettes. For Devil's Food Cake it's the copious amount of Dutched Cocoa Powder that makes it decadent, but it also has a good amount of fat.

    • @pd8559
      @pd8559 Před 10 měsíci +7

It's a result of a chemical reaction between the iron in the yolk and the sulfur in the egg white. This reaction occurs when the eggs are cooked for too long or at too high a temperature. It's harmless and doesn't affect the taste, but yes, it's a sign of overcooking. Processing the yolk further into devilled egg filing you won't notice.

QUESTION MISS TAMMY, for piping deviled eggs would the disposable Wilton bags be best or the reusable bags ?

I always have trouble on the peel. My late brother in law had a great recipe for this. Always paprika for the finish. Thanks for this.

Tammy I am 66 & I made my Deviled Eggs with Mayonnaise my entire life just like my Precious Mama, Granny & my Great Granny until I ate my Precious Mother In Law's that She had made with Michelle Whip & they were absolutely delicious ❤❤❤🥰! Now I make mine both ways 🥰❤.

Tammy, I love your videos and have your cookbooks. I wanted to share a tip I have used for years. I put a teaspoon of baking soda in the water when I am boiling the eggs. It helps to make them easier to peel. Even those that are not as aged as I want them to be. Thanks for being here and cooking like Momma did!
