    so my grill has a grate that the charcoal sits on and I am able to lower and raise it the control the heat for grilling. so how it there a way to deflet direct heat from my brisket to be able to give it a good smoke?

      Fat cap towards the heat. So on an electric smoker and pellet smoker,, down. Offset smoker, up

      This is my 7th or 8th cook on my highland reverse flow. I'm doing a brisket finally. I bought a brisket but later realized I grabbed a select brisket. Do you have any pointers for a select brisket? I had thought potentially I'd wrap early with foil and just abandon bark all together in favor of saving the moisture. What do you think about that?

    First time brisket here. What do I do is the butcher trimmed off the fat on both sides?

      Just cook it normally. You won't have a fat cap but it will still be good.

      Wow, that was a tasty piece of meat, thought it should more juicy but wasn't dry like I was concerned about. The farmer that we get the meat from doesn't get the full briskets only the flats. I'm going to try Costco's prime whole brisket, see lots of good reviews from you pros online
