Pumpkin Pie Meets Cheesecake: Pumpkin Cheesecake Bars

- Pumpkin cheesecake bars are the easier and less fussy version of pumpkin cheesecake. My recipe uses just 12 ingredients, comes together quickly, and is made WITHOUT a water bath!

Ingredients
Graham Cracker Crust
1 ½ cups graham cracker crumbs (170g)
2 Tablespoons granulated sugar
1 Tablespoon brown sugar, firmly packed
7 Tablespoons salted butter, melted (100g)
Cheesecake
24 oz cream cheese, softened (680g)
¾ cup granulated sugar (150g)
¼ cup light brown sugar, firmly packed (50g)
½ cup sour cream (113g)
1 teaspoon vanilla extract
3 large eggs, lightly beaten
Pumpkin Cheesecake
⅔ cup canned pumpkin (168g)

Instructions
00:00 Introduction
Crust
00:11 Preheat oven to 325F (160C) and line a 9x9 baking pan with parchment paper (optional, but helps prevent cracks and makes removing from the pan and slicing easier).
00:15 In a mixing bowl, stir together graham cracker crumbs and sugars. Add melted butter and stir until mixture is combined and resembles wet sand. Pour into prepared pan and press evenly across the bottom of the pan. Set aside (do not bake yet).
Cheesecake
01:49 In a large mixing bowl, combine softened cream cheese, granulated and brown sugar and use an electric mixer (or paddle attachment on stand mixer) on medium-speed to stir until mixture is smooth and creamy and no lumps remain.
02:39 Add sour cream and vanilla extract and stir until combined.
03:00 Add eggs, one at a time, stirring on low-speed until just combined before adding the next egg. Scrape the sides and bottom of the bowl with a spatula to ensure batter is uniform.
Pumpkin Cheesecake
04:37 Measure out about 1 ½ cups of cheesecake batter and pour into a separate mixing bowl. To this, add the pumpkin puree and pumpkin spice and stir until combined.
05:33 Alternate dollops of the two batters over the prepared crust then swirl with a fork. Transfer to 325F (160C) oven and bake for 40-45 minutes (see note if you are not using a metal baking pan) or until cheesecake is mostly set but center is still slightly jiggly. Allow to cool to room temperature, then transfer to refrigerator and chill for at least 6 hours, preferably overnight before cutting and serving.

Store covered in the refrigerator or in an airtight container for up to 5 days.
Baking pan
This recipe was tested and written for a 9x9 metal pan. If you use a glass or ceramic pan this will likely take longer to bake. Start checking at 45 minutes.

@@jerrycallender9927 Yes it is and so many folks don’t realize nutmeg (fresh grated) enhances both sweet and savory dishes. For thanksgiving try it in your sweet potatoes and your stuffing. So versatile and flavorful. It lends to and enhances other flavors. Ok I’m done 😅

@@jenniferanngarcia2496 Even tho “pumpkin spice” has nutmeg in it I still add freshly ground. Nutmeg straight from the nut is a totally different taste and helps in the enhancement of other flavors. Since I never measure when I add the nutmeg I’m going to give an estimate of prob 1/4 of a teaspoon. Hope this helps. 😉

dont sweat the cracks in a cheesecake. it even happens to the pros. my wife makes cheesecakes every year and the cracked ones get a chocolate topping to hide the cracks :)
you can reduce your odds of cracking by letting the cheesecake cool more slowly

I only used the light brown sugar measurement for the crust and only a 1/4 cup instead of 3/4 cup granulated sugar for the cheesecake batter. Wasn't as sweet but tasted just as good. Will defiantly make again.

I recently started baking and have been sharing my dishes it with my coworkers and supervisors. Today, one of the VPs approached me and asked if I could make him a pumpkin cheesecake.
I, of course, said yes, even though I have never made a cheesecake in my life, lol. So I ran to good old trusty "CZcams University." And after watching a couple of videos, I decided yours was the one. This video was legit so easy to follow, and the recipe is simple yet delicate and looks delicous af! I've got my pan currently cooling on the rack before I pop it in the fridge. It turned out awesome. It looks and smells fantastic. I wish I could share a photo. I can't wait to hear the verdict on taste tomorrow.

hello! i've made this recipe 3 times and every single time it's delicious and the talk of whichever function i take it to!! i love how in depth you go and how detailed but easy your recipe is. i do have a question for you: i'm making this recipe again for our christmas party this year, we have some guests who don't eat egg, so is it possible to make the recipe without eggs? i'm aware of the different egg substitutes such as applesauce, but seeing as to how cheesecake is extremely easy to mess up, i was just wondering if you could me out? thank you!!!

@@SugarSpunRun i’ve sent your recipe to 6 people now in a total of barely 2 months, literally MOUTH WATERING just thinking about it. i ended up using about a cup of buttermilk as a substitute and it worked out AMAZING!! the tangy, rich flavor brought out the best notes in the cream cheese and it was AWESOME!!
My mom requested your cheesecake bars with chocolate ganache for Thanksgiving dessert but I think I might make these instead. Can you show us tips on how to line your pan with parchment paper? When I made your original cheesecake bars my paper cut into the cheesecake when it was baking so I didn't have a nice smooth edge like yours.
That's a good idea! A lot of the times my parchment goes into the sides as well. It's really a matter of how well you press it into the corners. These pictures are taken from center pieces. If you really want a nice presentation, I find that it's easy to cut off just about a quarter inch all the way around. You get a nice presentation and a little snack for yourself. ;)

I know it's been almost a year since you released this video/recipe, but I have to tell you I just made two batches of this delicious cheesecake and they turned out great. Thank you! One batch I made per your recipe and the other I made the same but added a thin layer of ganache on top. They both were big hits at a recent Pumpkin Carving Party.
One question: When you put your cheesecake into the frig after cooling it down, do you cover it with plastic wrap or do you just keep it uncovered overnight? Thanks!
I'm so glad you enjoyed it so much! Typically if I haven't sliced into it I will leave it uncovered, but that is also dependent on what is in my refrigerator. If there are items in there that have a strong smell I will cover them so they don't absorb any odors or other flavors from the refrigerator. :)

I do not recommend it
This recipe looks delicious. However, you really should use cooking spray first in your pan, then line it with parchment. That way it’ll be flat and you won’t get those folds in it.
