With all the spare vanilla cakes his kitchen has, I can tell those vanilla cakes were baked and chilled days in advance, most likely their overall texture quality are highly questionable.
Most likely frozen cake. Easier to work with and by the time it’s there and sitting out it’s thawed
Typically also cakes that are chilled are a bit dense, making them easier to decorate

Lololol if you look at the city skyscrapers layer, when they're carrying it through the door at 1:04, it looks close together and really nice, and when they're dropping it at 1:07, those skyscrapers are crooked and just slapped on the sides. It's a second cake they made to purposely drop for the show. The real cake was either already delivered or hidden off camera. Fun to notice. All the footage of making the cake is from the actual day they probably made it, but filmed, cut and edited to look more dramatic.
