    The tradition in my family is to COOK the apples in sugar syrup or honey before mixing with other ingredients! They are NOT supposed to be served raw! It is an apple preserve with raisings (and dates, figs, chopped walnuts or any other nut, like pistachios or macadamias).There are many variations of this recipe, according to where your family is originally from.

    Interesting Marilia. I've never in 60 yrs had Charoset with cooked apples. But I've never had it with shredded apples which to me looks like dog food. Plus I always toast the walnuts in the oven first. I use the kosher blackberry wine cause I just don't like the concord grape. Never had it with dates or figs but that sounds good.

      It's not totally weird what Marilia says because the famous Claudia Roden writes about cooking the charoset in her book "The Jewish Kitchen". Ms Roden is famous for travelling and collecting recipes wherever she comes.

      @@voiceforisrael1504 Although, I just remembered: apples &/or oranges (and to a degree also bananas) is a no-no with me if I'm having any other food with it. It gives winds and cramps. I can eat it with fruit/veg, but not starch, protein, etc. So, I'd probably substitute the apples with figs or dates. One can also use sunflower seeds, etc. Anything, as long as it's crunchy & sticky & sweet.
