That cake is the most beautiful cake I've ever seen you are a true artist. and I think the flowers are perfect the way you have them arranged I couldn't have thought of a better way to arrange them. Again, sorry for the wait. Hopefully your cake turned out nice! I don't remember the brush I used, any soft paint brush should work. I use water or alcohol to clean up.
That's one beautiful cake.
For many reasons we didn't celebrate our 30th wedding anniversary in 2021, so this year it's going to be a 30+1 cake. You've given me some ideas to work on. Thank goodness I have until 19/10/22! Lots of piping practising using dummy cakes and expired fondant icing, that I didn't know I still had, to cover the polystyrene dummy cake! I can then scrape off all the mistakes and repipe until I get what I like.
Do you ever flat ice using royal icing, how do you go about doing it and could you make a video on that perhaps? Thanks.

How do you keep your royal icing strings from breaking? What recipe do you use?
Do you keep them from breaking while I pipe? The icing needs to be "Paddled" or spread out over and over to pop the bubbles. If there is an air bubble in the icing, the strings will break as I pipe. If you mean after they are all piped, I keep them from breaking by being VERY careful not to touch them. Here is my favorite recipe: czcams.com/video/M7osUvgi6YU/video.html
How long does it take to complete this including baking time?

Ooo, Not many icings can last in the heat. I'd try chocolate ganache under the fondant, and Royal Icing for the decoration. Royal Icing dries hard and doesn't melt as easily in the heat.

Is the cake covered in fondant?
Yes!
The first wedding cake I made had a fresh flower topper made by someone else. She came in with a bouquet arranged in a conical holder, and proceeded to smash it down into the top tier! I about died! The tier now bulged at the sides, and had a great big crater under the flower arrangement. Fortunately, the crater wasn't visible, but the tier was ruined for being saved for the first anniversary as is traditional. I wanted to rip into the flower lady, but the damage was done, so what would have been the point? It's just as well I didn't, cause she turned out to be the aunt of the bride, or something.
Did I not reply yet? Sheesh. I've found a whole bunch of comments I somehow may have missed. Sorry! Oh, NO! The entire top tier was ruined? I had a bad first experience with a flower lady too. She took the dirty stems right out of the bucket, and into the cake. We had words.

Instead of just plain white beads add colors

While I respect your opinion and preferences, personally I love the all white look with only the flowers for color. To me, it gives a much more classy and elegant look to the cake. I've seen so many cake decorating videos on CZcams where the artists use some absolutely horrid color combinations. I love Auntie's videos, she's the best!
