- At 2M Smokehouse in San Antonio Texas, pitmaster Esaul Ramos is breaking Texas tradition by bringing in flavors he grew up with. Ramos' barbacoa, brisket, ribs, turkey, and sausage all draw from his Mexican heritage in their own way.

Damn, this guy is an inspiration. He seems like a guy with no excuses, especially doing that commute from San Antonio to Austin. Even after losing his job he worked hard day in and day out. Opening his own business is a huge accomplishment
Huge respect to Esaul Ramos. You are the MAN! Love and drools from Southern California.
And big ups to call for the ally dogs, and fish tacos, taco nazo!
You can tell how passionate this guy is about the food he makes and it shows in the final product. I live 15 mins away and just tried it for the first time today. Everything was exceptional. Got the brisket man loved that bark , sausage , mac n cheese and coslaw was top notch. Its a must try.
I didn't know what hard work was until I saw this. Kudos to this man.
Barbacoa and lengua were literally my entire childhood lol. Love Texas barbecue!
Come at 5am and go 9 pm this is incredible hard work that why this man success !
that shot of the platter at the end looks incredible!!! 😳🤤
Thanks so much, Yungxtolo!
yup eff the sides. it's all the meats on a platter
Love people like him. People that are willing to do something different, rather than just copy what everyone else is doing.
This guy is a natural, the way he talks, he moves, the way he treats the food...wish you the very best, you deserve it!
Finally someone who is bringing back traditional source material into modern barbecue and doing it well. Salute!
This is probably the best food I’ve ever eaten. That sausage truly was amazing but the beef rib.....the beef rib....get a beef rib
Beef ribs aren't anywhere as good as pork ribs tho
@@michaelscalese4656 I guess it's a matter of divergent opinion, but the pork ribs you're getting must be heaven on a bone.
Because as far as I'm concerned, beef ribs might be among the best BBQ you can get.
@@schoolsout15 I think it might be because everyone in Cali can make pork ribs decent, and no one can make beef ribs, cause they are dry and chewy everytime I get em. Although, I have had bomb ass beef ribs, my dad just made a prime rib, and I had the runs on it, and they were awesome, and some guy who I knew who loved to Florida made some bomb ass beef ribs. Just here in Cali they usually blow, and pork is usually safe.
I had Beef Rib once. And I am hooked.
I like how it was so good he was like no i aint gon spoil it for ya hust get it XD
Barbecue for this dude is not cooking. It's a spiritual pilgrimage.
TheShachattack13 And he has attained total spiritual creaminess.
accurate.
I get it. Exactly how I feel when I make gumbo.
Wow Holy sauce😂
Robert Palmer except a chicken and sausage gumbo takes 2-3 hours.
This guy deserves the best, fair play to him for chasing his dream and being dedicated. Well done.
This is an EXCELLENT Video... Loved it... but the film Editing on this video was the "BOMB"..
the background music danced with each second of this video.... "Beautiful"
Thank you so much for sharing this great video..
I had the please to be around a great Bar-B-Q King in Dallas Texas... My Uncle Blackie had two of them...
Bob Whites Bar-B-Q and The El Rancho Restaurant in the 50s and the 60s and I was there in the 70s... Everything was made from scratch... I learned a lot!!!
When he died... he didn't give his kids the receipts... all they wanted was money... he gave them to me, because I would work in the back in the summers
and leaned the trade.... YUM...
I am thinking seriously starting a food truck and selling my Beef Jerky...
Thank you again for sharing this video... it brings back a lot of good memories.
Just to hear him speak so passionately about his journey and the effort makes me wanna visit San Antonio just to try it.
I love watching these videos. We are all products of our environment for sure. I'm from northern California and I love bbq myself (bbq in this area is really bad) I smoke with wood from wine barrels and have had great success and I work for a winery so getting my wood has been easy. I just do it for fun just like you did and continue to do. When people ask for "the secret " I always say it's patience as well. Love what you do and be passionate about it, very proud to see you also incorporate you Mexican flavors into this. Food looks delicious and if I ever make it your way I'll be stopping by.
I really feel your journey bro. I am Bringing Texas, Cajun and Mexican flavors to the Philippines... and so far people are loving it!
Mexican flavors in smoked meat works great. I do it when I smoke meat even tho I’m not Mexican.
Mexican flavors don’t mix well with all BBQ dishes. Some yes but main things like Brisket no
Cool like what examples ?
Man the background music is dope too
Jerz White yeah, especially around the 4:00 mark
RLY? The music is complete ear cancer.
Michal Taranza oh look another child looking for attention, this is why we cant have nice things...
zケ oh look another tard looking for attention. FU

hats off to his passion for BBQ... he took his time to learn the craft... sleeps in his smoke house... that is crazy... hard work paying off...
Amigo I like everything I seen in your video that's exactly how my family did it growing up I'm from Michigan but my family comes from Texas by way of Mexico I started tearing up when you were talking about the cow head we haven't done it like that since my grandma passed away
Our world it turning because of the people like him!!! Young generation must listen to these holy words:I will keep busting my ass to be as good as i can, cheers to that!!!
First time I've ever thought to myself "wow this is really good editing" while watching a video.
I'd like to try that amazing barbecue in a handmade tortilla with hot red and green salsa, some cilantro and onion. Bet that could be a terrific combination.
That sounds amazing!
Yup.
Duhhhh how else would u eat it my friend
We have been doing that in South Texas in general as long as I been born. Try it. You will teleport your taste buds to a little South Texas flavor 😋
Don't know why he thinks Mexican flavors would be a risk with BBQ. It's the perfect combination. Working on a mole brisket myself.
let me know how it goes!
It's a risk because BBQ people and especially Texas BBQ are some of the most pretentious asshats around when it comes to BBQ. "HUR DUR ONLY SALT AND PEPPER IS NEEDED ANYTHING ELSE AND IT RUINS IT. SAUCE IS ONLY THERE TO HIDE BADLY COOKED MEAT"
No asshats, other seasonings give a different flavor other than just pure beef flavor both are good just different, secondly why in the world is BBQ supposedly the only food in the world that cannot benefit from a properly paired sauce?? Steakhouses serving top quality steaks will pair their perfectly cooked amazing steaks with a proper sauce and it's all copacetic
jayyyjude obviously you’ve never been to San Antonio (where everything’s mixed 😌)
Chris Ewers its because he knows theres boundaries in the bbq game, if you mix in a different cultural flare it wont be right because people like keeping it traditional style, even though it might taste good,
most old school pit masters dont wana hear it,
jayyyjude in all reality though. Salt and pepper is all you need if you have quality meat. Central Texan "asshat" here 😂
This place is awesome the best in San Antonio hands down. The brisket melts in your mouth. This place is so popular they sell out daily ,so you have to go early or you don't get any bbq. If you ever is San Antonio you have to check them out.
Absolutely amazing! A man who truly cares...it comes out in the taste of the incredible food. A borderline religious experience.
For all who loves barbeque, we salute you.
Damn, that's gotta be the best real food I've seen. Those sausages looked amazing. I've never clicked on a video so quick.
Damn! This was awesome and much respect should be given to this guy and his passion that clearly is shown on what he produces i know i have much respect for him!
What a powerful message mad respect for you just because I grew up the same way and I as well have a mad passion for cooking. Hopefully one day I'll be able to travel to eat at this exact place.
