To grill corn on the cob you don’t need to shuck it or remove the silks. Just get a medium fire and place your corn - in the husk - straight on the grill grate. You will jut allow the corn to cook - right in the husk - on the grill for about 15 minutes. You will know it’s done when the corn husk is browned and dry.
Then you can remove the corn on the cob from the grill - it will be hot so be careful. You use a sharp knife and cut the end of the corn off then remove the husk and silks really easily. Your grilled corn on the cob is ready to eat then - jut add a little butter and salt if you like.
But for this grilled corn on the cob recipe, I decided to do my take on a Mexican style street corn. Once I remove the grilled corn on the cob from the grill and remove the shuck and silks, I apply a layer of mayo, a sprinkle of Cojita cheese (a Mexican style parmesan cheese). Then sprinkle some Tajin seasoning, squirt of lime and a little finely diced cilantro. And that is how you make grilled Mexican street corn.
This grilled corn recipe is simple and easy for cooking corn on the grill.

Agree. Malcom is an approved Vato
Mexicans know how to cook circles around most people.
I dont have a grill
Funny, I just made a batch of this two weeks ago. A couple of guys from my church helped me with my car, so, as a thank you, I made a meal for them and their families. Ribs, jalapeño poppers, potato salad, coleslaw, and street corn. That food was a lot of fun to make.
Thank you for doing them the real way the Mexican way, a lot of people try putting some crazy twist on it with weird ingredients and it just delicious the original way.
Oh man yeah! Mexican street corn rocks, and yours looks delicious!
I’m from south Texas (bordertown) and wasn’t expecting much from this video, but you did a great job, actually! Impressed!
Love the mexican street corn. It's great with a little char on the corn too.
Man I am so glad you did this video I really am going to have to make me some Mexican Street corn soon
I've made these a few times. The flavors that come through are incredible!

Malcomb, you've never steered me wrong before. I have seen the Tajin seasoning but have never tried it. I will now. Thanks for all of the videos that you create and share. Thanks to your wife for the assistance that she gives. Y'all rock.
Hell yes making this in a few hours 🍻👍🏼
This corn prep method rendered the best corn I've ever made. Ty HowToBBQRight!
Soak them in water an hour prior they will steam nicely keeping them crunchy and juicy.
Bonus
Soak them in brine, my grasshoppers
Always soak
Great Idea Malcom!
I wanna try this one!
You really are the man......Love your recipes
Going to try it tonight. Great vid - entertaining and crystal clear! Excellent job.
I love his take on food and the way that he does it
Its called elotè if anyone wants to know
Si voz gracias.
I love your recipe!!!!
That looks amazing
It's called "elote" here in Texas, a lot of street vendors have it. If you have never had it you are missing out. It's really good. Also, a variation that I have seen most vendors do is cut the corn off the cob and put all the ingredients in a cup.
Eric Mathis bruh elote is how u say corn in Spanish not in “texas” everywhere that speaks Spanish says that
Love grilling corn, but there's so many ways to do it... Thanks for the tips :)
Dude...this video has a high pitch ringing throughout. It’s like a dog whistle for humans ! I thought I was going crazy but it’s definitely there. Love your videos but you might wanna edit this one somehow 😂
You had me at Napoleon Prestige 500 ! Great recipe so simple THANK YOU!
damn, you got it man!! one thing you could do too is instead of cutting the husks, peel them back to use as a handle.
That’s what I do! It works great.
Well done! Looks great.
Looks so good! Cant wait to try it :)
Man! that looks great. Definitely going to make this on the week-end. Loved the video, Thanks.
Malcom, can I just pitch my tent in your backyard and just eat all this great food you make.
For real, I’ll join ya.
Block party time... who's bringing the drinks and chips?
I love cooking corn that way! I just pull the husk back and use it for a handle to eat!
Looks good! will try next week!
Made it this weekend,was delicious!!
Wow cool grilling..thanks buddy much appreciated..
Really enjoyed the video!
This is so good it often takes from the main dish. The lime at first sets your taste buds back but then more bites you take your taste buds are like give me more. Layers of flavor.

Very helpful and informative. Thanks
Good video brother. We sure do love that style of corn(elote)!
Man, everything you cook looks so good! Now I gotta' try this one!
Malcolm you have taught me so much about smoking and grilling and I thank you. . Now I’d like to share with you how we northerners do corn 🌽. Before you put it on the grill soak it in a bucket of ice water for about an hour . Remove from the bucket and shake excess water off then place on grill. The moisture will steam the corn on the inside . Shuck it dunk it in butter and season to taste.
Delicious recipe
My family wiped these out. Wouldn't shut up about how awesome they were. The combo of cotija cheese with a little fresh lime juice is amazing. I was a little worried because cotija smells like feet. I forgot to ask my wife to get corn still in husk but the recipe worked just as well with shucked corn. Only addition was a light brush of olive oil on the corn before going to the grill.
O man, Malcom.
Yo've got yet another great recommend spin on a classic cob corn recipe .
Being from S. Florida, we've got some strong sweet corn around lake Okeechobee, to try this street corn with.
You da man!
Oh boy those look fantastic! I've never tried them before
It's amazeing
Great video. Thanks.
Tajin on pineapple, watermelon (or any melon)or strawberries is awesome!!!!
Man that corn looks great. Definitely gonna be trying this!
Tried these exactly as you grilled them...and they were perfect!..no need to soak. Thanks! I didn't have the Tahine...so I used Adobo brand Cilantro Lime Seasoning...Most excellent!..I had the old boiling method down pat...but this is my new favorite way to cook corn!

good video. I will try this soon.
🤤... I love eating corn like that!!
looks killer boss
Yummy yummy!!
Awesome Happy 4th Malcolm🎸😎
Yes one hour presoak works great but I found ice water is works better it hardens the corn and keeps a great juicy corn but don’t just take my word for it this guy is a great cook and I’ve leaned a lot from him thanks bro
I usually soak my full corn husks in a bath for atleast 30 minutes prior to adding to the grill and cook the same way. I feel it steams the corn in the husk better this way from not soaking them as I started out doing. NOT saying you are doing it wrong just adding to your awesomeness.
thats the way i do it.
Agree 💯
malcolm be bringing that fire!
Thanks a lot u have a great vibes bro
Muy bueno senior 👌🏽
Worms and all yum!
Right on dude!
I've never grilled corn, but thanks to your prestation I will tomorrow. Thank you

Good job brotha im gona make them like that for now on
Amazing
Coming from Los Angeles, I have to say that you did a great job on the street corn. Grew up eating those from the peeps that sell in my neighborhood.
I do recommend getting some butter on it, but that also depends on the type of corn you are using.
My mexican people salute you ✊
The corn steams. I like it GRILLED.
ima try this!
Just scored some sweet corn Mal cant go past you mean Recipe fella my wife said if we ever visit the USA its to come see you . Love your channel from New Zealand
We soak the freshly-picked ears in a bucket of water for a few hours, then grill them. They steam nicely, and the husks don’t burn nearly as quick.
Exactly!!!
Same here!
that's the exactly way for a Mexican street style flavor !!!!
that, looks so awesome...what other mexican street food vids?
Love this corn, I have not tried it with the lemon or cilantro but I will be tomorrow
love the dog
wwow sir an awesome treat. I grew up in east los angeles and this was an old time favorite it was a dollar back in the day dut I think they were steamed but I like the flavor of the grilled husks on the corn. I will need to do this one for old times. thz
Tajin on Watermelon is amazing!

Malcom, I tried this and it was great flavor. I have never tried the Tajin seasoning, Now I put that on everything. Also if you use the Mexican sour creama it goes great with the corn. Love watching your videos and have got alot of great ideas from you. Keep on rocking the BBQ
