    Wheat is also a gluten product and gluten is responsible for that texture in maida and wheat..moreover maida,sooji,rava etc are all derivatives from wheat..avoid wheat products who have thyroid ,pcod and pcos as gluten can worsen the conditions.rice products and it's derivatives are gluten free and can be substituted instead of wheat...u can try buckwheat as replacement of wheat which is completely gluten free
