  • 600g chicken breast
    250ml yogurt
    1 1/2 tsp fresh ginger
    1 tablespoon fresh garlic
    1 teaspoon salt
    1/2 teaspoon red food colouring
    1 lemon or lime
    1/2 Teaspoon Turmeric powder
    1/2 Teaspoon Extra hot chilli powder
    1/2 Tablespoon tandoori masala powder
    1/2 Tablespoon cumin powder
    1/2 Tablespoon coriander powder
    1/2 Teaspoon ground pepper
    1/2 Teaspoons Citrus powder

    2 tbsp of Kashmiri chilli (not hot, just colour) and 2 tbsp of tomato paste concentrate, and you can ditch the colouring! I would also recommend adding freshly 1tbsp ground (important) cardamom and 1tsp cumin - this will really elevate it. For myself, need to figure out a way to get to 400 degreesC on the Ooni Karu 12, then I will join you in the perfectly charred chicken pieces club!
    Edit - can you say what temps you got up to??

    Followed your recipe this evening. Did not have Citrus Powder nor Masala, but substituted a little curry powder and extra chili powder. This technique and recipe is AWESOME. 6 hours marinated, so I expect better next time. Total Respect!

    Nice. I have made lots of dishes in my Ooni. Best way to know if chickem, meat or fish is cooked is by poking it. When you lern this thete is no need for a thermometer

      About 5mins in total. Depends how hot the oven is.

      As hot as you can. Around 500c is good.

    Nice vid, but..really shouldn’t use the same turner on raw chicken, then everything else despite high temps, it’s just not good practice..cross contamination is best avoided..!

      have to agree with this. lovely looking food and skills on display but big no no using the same tongs on raw chicken and the bread. asking for campylobacter. Nice looking food though 😋

    Dude, silicone spatula! The scraping of metal on metal is so distracting from the recipe.

      Silicone tongs are NOT safe for a oven like this. They can only tolerate up to 428 degrees Fahrenheit or 220 Celsius. A pizza oven will go to a 1000 F.
