Spending a Day Back in My Old Kitchen. Can I handle the heat?

- It’s been a while since I’ve worked a service in a busy kitchen. Last weekend, I went back to my old stomping ground at ST. ALi in Melbourne, Australia to see how long I could last back on the pass. Thanks to the everyone at ST. ALi for letting me get in the way during a hectic weekend breakfast shift. Cheers to the baristas who kept me caffeinated.

Love longer format videos! The longer the better of showing restaurant cooking. To many channels do home food. Not enough channels doing restaurant style food!! Love your channel!
Thanks 🙏
As a chef myself, it’s great to see a true representation of a real kitchen environment during service. Big props
hey chef, wanted to know is the life of a chef terrible?Like long hours,no vacation minimum wage? Will i have the same fun cooking in restaurant as i have in home?
@@ko-kf2nu Hey usually the chef life is really hard because as you mentioned before you will sacrifice mostly all of your free time 14-16hours shifts. I am coming from michelin restaurant backgrounds currently working in 3*** establishment and far from being chef . But if you are passionate enough and ready to sacrifice everything else for it then do it. Other than that it’s tough work with poorly paid labour unless you reach highest ranks like : Chef/Chef patron (owner.)
@@VantaBlackShorts totalement
@@VantaBlackShorts agree. I was a cook and my son is a chef. If my son asked me for advice I would've told him to be a hairdresser instead. If you're young and single it's all good but if you have a partner and young child it's hard. The pay isn't great but at the end of the day, you know how to cook to feed yourself, family and friends 😋
@@marilynschmidt6400 Agreed. As a single guy I cooked and cheffed for 25 years but got married later in life, had two boys and the chef life was not conducive to Family responsibilities. It did not work together, so here I am at 45 re-educating myself for the next 25 years. If my kids tell me that they want to chef, my advice also we be hell no. I taught you how to cook like a boss, now go get a job that will provide the time & consistency for your mate & family.
Love this. Reminds me of when Anthony Bourdain spent a day at his old haunts. Awesome to see chef really get down with those skills.
As a former chef, I kind of miss the rush of service, 26 years in the industry was good enough for me. Now I enjoy cooking for the most ruthless critics, my two young daughters 😅 covid lockdowns was the short-circuit I needed to get off that merry-go-round. I realised i missed out on alot of my family time especially when my girls were young. I'm now able to explore baking sourdough, making puff pastry, pies 🥧 And just plain experimenting. Good luck on your journey, Chef Andy 👨🍳
I really like your videos because I can really see the tremendous amount of work you have done all these years and what really means being a cook. No holidays, extreme hard work, pressure all the time. I'm sincerely in awe. So much for those wannabe youtube chefs cooking from mother's basement. They wouldn't last an hour in a professional kitchen. Much Love from Italy
The noise of the ticket machine still gives me serious anxiety attacks. haha.
Hahahahaha
Haha I thought the same thing..
Sometimes I want to do a similar thing just jump back in a kitchen for a shift see if I survive, then I remember god no
It haunts my dreams
Exactly
The PTSD is real
I have to say, even though im out of the kitchen these days, i still miss that rush of service, i mean, i dont miss it so much to ever go back, but its nice to watch a video or three of chefs doing their thing, its truely unique to work at speed but with intention and perfection.
love the longer videos and also love seeing pro cooks at the pass. such an insanely hard profession, as a humble home cook i'd probably be wheezing or dead by the end of a service. amazing work chef!
The way you made those eggs actually blew my mind!! Well done, chef!
I really enjoy watching your videos. I'm learning about preparing foods from other areas of the world. Thanks 💜💜💜
Thanks for watching 🙏
Love your videos. Your passion shows through!
Also, that hamburger and chips dish looked like fire!!!!
Been to St. Ali many times over the years and know how much volume it does. This was ambitious to say the least - good stuff! Loving the Melbourne content
As a former chef myself, props to you. But the sound of the ticket machine still sends a shiver down my spine. 🤣
I loved this video. This type of content Is amazing. I found you on tiktok but I love the longer form videos. Especially traveling around etc. As someone who just started as a chef I love your style and calmness

Thank you for showing off the amazing culinary delights in Melbourne. I think it’s the food capital of Australia. Great video!
Hey Andy! I’m sure you don’t miss the pressure of working under that kind of pace. That’s the part of the restaurant biz that burns people out. I bet you’re happy to see that they weathered the Covid storm and are still alive and well. Cheers mate! 🍻
Really awesome to see Andy in action!😁👌
Thoroughly enjoyed tagging along. It’s eye opening to watch a pass in real time almost .. you did well for a being a little out of practice! At least you kept your head in the heat. :)
I’m so glad I’ve subscribed. This content is amazing!
And this is why you should appreciate your chefs ❤
I love your field trips when you take us in a day of your life. Living in the US, it's so cool to see another country and their cultures. You and Babe are my top 3 people to watch on social media 🙂
Great vid!! Used to live in melb, miss it so much. The food, and choice of food was unmatched for any city I've ever been to. Not to mention the coffee. Really like the vlog type format video too.
I made your Butter Chicken tonight, and it was amazing. I've made several of your recipes and they've all been huge successes. Keep up the great work. I've subscribed to keep trying the recipes you share. Thank you.
Thanks for the longer format keep up the cool videos

Seriously? You need to get out more mate.
@@durianepicurean was about to say the same
@@durianepicurean I’m a chef… I get out a lot. America has terrible looking food.
@@durianepicurean America has terrible presentation. The way he presented it looked amazing. Idk what y’all on about.
@@yrbelite8450 I was also a chef and I've been to Texas. Have to say the burgers in Texas are the best I've ever seen.

Really enjoyed this. 👍
Absolutely loved this video
You are the best chef ever.
Welcome back to Melbourne. Hope I can see by chance to say hi 🙋♂️
Love it Chef. I’m with you brother. At my age I would not be able to keep up, been off the line for way too long 😩. I do miss it though. But in my day I was unstoppable and fast lol. At 62 I have definitely slowed down 😥.
Thanks for honoring the kitchen staff, most customers don't realize how hard they work in the back. I try to frequently give the kitchen staff thanks for what they do.
You’re a champ brother! Love your content.
Love the travel videos!
Really sick episode! More of these! 🤘
Looks like a good trip to Melbourne. Thanks for sharing.

Before you left I assume you were a head chef, but awesome to see you try to work at your old joint, surprised they let you take charge. Love the videos.
WE JUST LOVE YOU Andy!!
Keep up the great content buddy! 1M subs in no time
GREAT video
Love your honesty bro and your skill set keep up the mean mahi
I don’t know how I found you Andy, BUT I LOVE YOUR CONTENT ❤️❤️💕
I always love those little details like wiping the spoon on cloth before grabbing next poached egg. Like how when I play war pigs I always shoot my hand off the fretboard like it was hot 😂
Great video, at one point though, I thought I saw an avacado with about $17,000 worth of lettuce on top.
Keep up the good work.
Great video
Thanks for this! I’ve always wanted to work as a chef or line cook, but my disability prevents that so it’s cool to be able to “walk in your shoes” so to speak.
FANTASTIC!
First time I've seen that omelette technique. Fantastic!
Love the longer video! Can you show more food and restaurants around Melbourne?
Andy did a video of Melbourne's top cheap eats a while ago.

Awesome videos. A mini stage is a great idea to keep the cobwebs off!
Wonderful stuff mate!
Tried to finish, but the minute I heard the wheel print I had flashbacks. I certainly don't miss that sound
