Hissing usually doesn't mean that the cat is mad, but that it is scared. I would back off in such a case just to not give the poor soul a panick attack.

I adopted my cat from my neighbor who's cat accidentally got pregnant so I've been around her whole life. She used to hiss, spit and growl at me constantly. Now, I can't even leave the room without her following me around like a lost pup.
That's got to be a male, and he's spicy for being just a week old, I mean I've known kittens to hiss and spit at that very early age, but that's the first time I've seen and heard one actually lash out like that. And that growl, is really strong for such a small little thing that just weighs a few ounces, goes to show that the cat world really is mysterious, that's what I love about them.

Over 50 years ago my cat had a lone kitten in my bedroom closet. She hissed at me only a few minutes after she was born.
