How to Make PIZZA CRUST KETO (high protein, no eggs, no cauliflower and TASTES like REAL PIZZA)

    Hello friends! Thanks to your requests, we're making keto-friendly pizza crust today. Of course there IS a catch which I will get into during the video. You can decide whether it's worth it to you or not. But with only 2.2 net carbs per slice, it's practically pizza without carbs! Personally it is very worth it to me.
    This keto pizza dough handles and bakes up very much like a traditional pizza crust. But perhaps a bit "healthier looking" with the brown color from oat fiber and visible seeds from ground golden flax meal. It even tastes a lot like real pizza!
    It's super convincing when I top it with vegan cheese and sausage too. HOWEVER, there IS a trick to making vegan cheese actually taste good (which you will also see in the video).
    BONUS the cold leftovers the next day taste great as well! Just like in the old carefree carb-y days hehe
    By the way, my original inspiration for this keto dough recipe was the keto buns from my local Save-On-Foods bakery! They are great but expensive so I took the ingredient list, kept the stuff I could buy easily and skipped the ingredients that I couldn't. Then it was months of adjusting ratios and the baking method until I came out with buns that were even more delicious than the original! From my keto bun recipe, I tweaked it just a little to make my vegan keto pizza dough recipe.
    Please keep in mind that while I love to have this low carb pizza sometimes, it's still a highly processed food. And as mentioned in the video, please drink LOTS of water when indulging in food like this that isn't water-rich while being very high in fiber.

    IMPORTANT INGREDIENT NOTES: I particularly like the Anthony's brand of Vital Wheat Gluten. I find it has less of the gluten-y aroma compared to Bob's Red Mill. Also, Anthony's Oat Fiber has zero net carbs but other brands may have more. Please keep this in mind when sourcing ingredients.
    ALSO, I want to emphasize that WEIGHING ingredients is a much more accurate method to measure as inconsistencies from using cups/spoons for measuring can really affect your results.

    Love this and will definitely make it! Bread-like keto recipes can only go so far with almond flour and xathum gum lol. I'm finally going to try the vital wheat gluten and hope it doesn't cause my candida to flare. Also would be great to see more desert recipes! Like I imagine with ingredients like this you could probably make good cinnamon rolls!

    I made this today. I divided the entire recipe by 4 to make 4 pizza bases. One base came to under 310 calories and 43.4 grams of protein. If I wasn't in a calorie deficit I'd go naughtier with the fillings but I have to say I was so pleased that this came out bready and crusty. I don't personally like flax seeds but I did use normal flaxseed meal and not golden (will do next time). The recipe was super easy to follow though and they rolled out easy too. Thanks a lot Mary

    I've been making pizza for years; when switching to low carb at first I made pork rind crusts, but lately have been using a modified Diedre's version for pizza dough. I see that there are similar ingredients, yet over the years I've made some changes to it as well. I use inulin instead of honey or syrup to activate the yeast without adding additional carbs. Also I tend to pre-cook the crust and while it is cooking I'll heat up the tomato sauce with added Italian seasonings and other spices. I also pre-cook the pepperoni in the microwave for 1-2 minutes on paper towels to absorb some of the unnecessary fat (it also keeps the pizza from getting 'soupy'). Otherwise, I'll be giving your crust a try.

    this turned out great. really great. i used san marzano tomatoes from a can that i mushed with a fork to crushed tomato consistency, and added some fresh basil, fresh oregano, and fresh mozza. love the crust. far better than those cauliflower crusts.

    What if you used barely malt instead of maple syrup? That might make a fluffier dough. I remember doing an experiment in college and discovering that baker's yeast catalyzes maltose faster than monosaccharides

    I just bought a stand mixer cause I’ve been craving bread but don’t want to carboload. I love pizza so much I’ve been doing pizza ingredients on top of corn chips or rice. Cutting wheat is more interesting than cutting carbs, although lower carb as opposed to 1 million carbs is appreciated.
    #. I might die if I can’t find a jalapeño cheese bread. I want one that actually taste like cheese instead of just having a trace of cheese running through it. My dream bread would either be sliceable into a sandwich loaf or something with the shape of a pita/tortilla/flatbread that’s not quite a cracker. I thought the texture of your recent rolls looked perfect. I may start there with my experimentation. Thank you for your time and effort in these recipes. Plus I still hope that you will take this recipe suggestion as a challenge to be excepted.

    Oh had an idea! I am insulin resistant so I have to eat low carb/keto. I’ve been trying to find a good pasta replacement and I recently bought these dried soy knots that actually have a similar texture to pasta and have little to no taste except for a weird after funkiness (that isn’t really weird if not trying to use as pasta lol). They are also need to be smaller but I was wondering if that might give you an idea for a future video

      I use bean curd skins (tofu skins) to make lasagne. I find the fully dried skins rehydrate into a more "pasta-like" texture than the semi-dried/flexible or fresh-frozen skins. I usually layer several skins to get some thickness to them so they stand out in the final lasagne layers with the sauce.

    Love this recipe (and the last)!! Do you know of a flaxseed replacement (am allergic)? I just found out through experimentation that it was such a crucial component to the recipe -- tried to replace it with psyllium husk (didn't work) and chia seeds -- also didn't work. :(

      @@martinevanhaperen4745 I didn't. I was thinking I should... But today I just tried lupin flour (in place of the flax) in a loaf recipe (not pizza) -- worked better! It didn't rise as much as the flax would, but it didn't flop like the unground chia or psyllium husk. I'm thinking i need to add more butter next time with the lupin.

      Honestly, it's quite the workout that requires some strength. Also, this dough needs to be kneaded quickly because there is so little sugar for the yeast to use that if you take too long, the sugar will be exhausted before it's time for the dough to rise. And this dough is tougher than regular bread dough which makes that limitation a bit challenging.
      However, it's not impossible. Some viewers have commented that they have done just that and with success too.

    Since for the last soy free tofu you used pumpkin seeds would sunflower seeds also work? I find they are a little bit easier to source even in their unroasted form.

    Is there a difference between oat fiber and oat bran?

      Yes. They are made from different parts of the oat plant. The fiber is made from the oat husk (outer shell) and is completely indigestible making it zero net carg. Bran is higher in net carbs.

      I've substituted wheat bran for oat fiber before. Gives a more 'whole wheat' type dough. Also you may need a bit less water. And the carb count will be higher.

    Super cool, thanks for this recipe! My addition would be homemade tomato sauce for every pizza because it is just such a game changer in terms of taste, really. So the recipe we always use is (for app. 3 trays):
    1 big can of peeled tomatoes
    1-2 fresh tomatoes
    2 small shallots
    2 cloves of garlic
    2 tsp salt
    2 tsp sugar
    1 tsp pepper
    5 tbsp olive oil
    3-4 tsp oregano
    250 ml red wine/water
    Saute the veggies (exept for the tomatoes) in the oil until tender, add the sugar, then add the can tomatoes and cook until it bubbles. Let it cook on smaller heat for about 15 min. Then add the fresh tomatoes, herbs and spices and the red wine/water. Cook it with an open lid stirring occasionally until you have very thick sauce (can take up to +1 h or more). Heat it up before putting it onto the pizza. I just also tried white pizza sauce for the first time and it goes really well with veggie pizza. 😊

      No, as I said in the video, please do not confuse the two. I assume you're talking about oat flour vs oat fiber. Oat flour is made with whole oats. Oat fiber is just made from the indigestible outer husk of the oat. They are not interchangable.

      No, the flax in this recipe is in the perfect ratio so it's not overly flaxy. Almond flour doesn't have the same properties

    I'm going to give this a try when I can. I'm NOT vegan, so I'll use my usual toppings. Not much sugar in my sauce, though I do use a little red cooking wine. There's a TON of flavor components in tomatoes that are not water or fat soluble, but ARE soluble in alcohol. I make sure to reduce the salt I add if I use cooking wine, because it's rendered essentially undrinkable as a beverage by the addition of enough salt to gag Nancy the Salt Vampire! Then I will add toppings the vegans and veggies won't like, so I won't torture them by describing them. Suffice to say they're delicious. I do insist on full-fat whole-milk mozzarella cheese, though. I've tried using part-skim and even the vegan "cheez" if I have a vegan guest, but frankly, I find part skim flavorless and vegan cheese-oid substances unconvincing. But I do want to try this pizza crust AND the bread made from similar ingredients (I will keep the quantities down so I don't wind up with a monster loaf.)
    I don't have a stand mixer, and don't make enough baked goods to justify one. I would want to get an actual KitchenAid if I expected to make bread with it, or I'd just be condemning a poor electric motor to the afterlife. Kneading bread dough is rough work for a mixer in the best of conditions, and this dough sounds like it could go a few rounds with Rocky and not give in! So, will it bread machine? I DO have a bread machine, and it's easy to use one to just do the mixing and kneading steps, though it might also be okay to do the baking step for the loaf kind. But I'd love to be able to press my bread machine into service to make the pizza dough if possible. Will it work, or would I have to modify the recipe for the poor bread machine?

      Follow the printable recipe when in doubt. However, it's far more accurate to measure by weight. If you have a kitchen scale, please use it for best results.

    Like if you were eating those sausages on their own, who in their right minds would eat 2/3 of a sausage as a serving? Nobody.

    Although, that said it looks more bread-like that most low-carb bread I've seen on the market. Most of it is like cardboard. That just looks like it's whole wheat crust.

    So you made a Keto Pizza, which main components is a cereal corn, aka oat, and sugar (i give you that most of the sugar is eaten by the yeast fungi, provided you let it rest for 12+ hours)... has anyone told you that oats aren't keto? Yeah, they are healthy, but they are a grain and as any grain they are mainly carbs. One Cup of Oats is about 50 grams of carbs, 10 grams of protein, 5 grams of fat and 10 grams of fiber. That is 2/3 carbs.
    You could just as well have made this with rye or wheat flour and called it Keto. Oats ain't "low carb - high fat". But i respect the hustle... i mean given the video length and that 25% of the run time is that mattress ad... i get you had to put something out to pay the bills. But could we please not call things Keto when they ain't Keto? And yes, i know, a lot of "livestyle" blogs run around and claim that you can eat Oats when on a Keto Diet, but then you are not on a Keto Diet, you are just on a Gluten Free Diet at best. Also, instead of sugar i would use non pasteurized honey, just so much better for pizza.

      You should go look up what Oat fiber is my bag has 3g total carbs, 3g fiber and nothing else by Naturtonix.
