BBQ Chicken On The Weber Kettle! | Ash Kickin' BBQ

  • In this video, I will show you how to make delicious BBQ chicken on the Weber Kettle grill with one of my favorite grilled/bbq chicken recipes! Get ready to impress your friends and family with this mouthwatering recipe that I just know you will be making all summer long!

    Full Recipe:
    | Ingredients |
    -Chicken thighs
    -Italian Dressing
    -Ash Kickin' BBq Honey Chipotle Rub
    -SuckleBusters SPG
    -Open Pit BBQ Sauce
    | Instructions |
    Prep:
    1. Trim chicken thighs per the instructions in the video if you choose.
    2. Put the chicken thighs in a plastic bag, and dump the bottle of italian dressing in it. Let the chicken marinade for at least two hours, but preferably overnight.
    3. After the chicken has marinaded, season with SuckleBusters SPG and Ash Kickin' BBQ Honey Chipotle per the video instructions.
    | Cooking |
    1. Get a chimney of charcoal lit, and let it burn until it starts to ash over.
    2. Once the charcoal has ashed over, dump the charcoal on one side of the grill and let the grill preheat for a few minutes.
    3. Put the chicken on the opposite side of the coals, and let it cook for 10 minutes.
    4. After 10 minutes, move the chicken over the coals and let it sear for a little bit. Then move it back to the "cool" side of the grill for another 10 minutes.
    5. After another 10 minutes, 20 minutes total, sear the top side of the chicken. Be careful not to let it go too long over direct flames or the chicken will burn quick and easy.
    6. Repeat steps 3-5 until the chicken reaches 175-180º F.
    6. Once the chicken has reached 175-180º F, sauce with open pit BBQ sauce and let the sauce caramelize per the video.
    7. After the sauce has caramelized, remove from the smoker and let cool for 10 minutes.
    8. After the bbq chicken has cooled, eat and enjoy! This truly is a wonderful recipe with great summer flavors!

    Open Pit barbecue sauce was all we ever used back in the 60's man, we used to put that stuff on everything, popular back then.

    Hey Darren,
    Just rotate the grill grate with the tongs. Then spin it back so you don't knock the seasonings off.
    Made me laugh.. don't over complicate the cook. From a man that uses 6 rubs, 2 sauces, special pellets and 3 different temps for 12 hours of monitored cook time and perfect internal meat temperature. Chicken looks fantastic, char and all! Add a potato salad.. I'm on my way over now!
    Pastrami of course.

    Good cook! Suggestion: Use 2ea sheets of newspaper to start your charcoal, fully lit in 10 minutes. Try using 1 pack of the dry Italian seasoning and sprinkle over your chicken instead of the bottled! OMG!

    First off, I am loving these kettle series bro. A-men on the over complicating stuff. I get carried away too much with grill temps, time, ect..Backyard BBQ always tasted better when you didn't worry about all that and just went off instincts. Probobly the way it was ment to be.

    Oh ya, thats a staple in our house, pretty much the same way. This maybe a St. Louis thing but real weber kettle grillers here all seem to have these black oval shaped pots with little white specks and instead of dumping the sauce on it you let it cook in the sauce for about an hour or until the Cardinal game is over on kmox. Cook some canned green beans or corn over the cool area once its in the pan of sauce and "thats a winner" on a Sunday afternoon. Good job !!!

    I grew up with chicken over charcoal and Open Pit BBQ sauce. This brings back the memories. I have been trying to find Open Pit where I live but I have struck out at two of the four food stores so far. I'll keep searching. Country style ribs over charcoal with Open Pit at the end kicks ass, too.

    Do you have the rotisserie ring from Weber? I do it over the coals with the ring on……the grate is 7 inches higher where the flame never gets to it. It is money!
