Same thing when we went to visit Pinamongahan also in Cebu. Varying parts of pig don't go to waste besides becoming lechon. And they do the roasting in the backyard as well.

i would have understood the demonetization if you showed the pig being butchered. saw it once at my aunt's wedding way back in the 90s. what you've shown here is prepping the food. the difference is its the whole pig instead of just parts of it.
