If you're cooking along with us, prepare these ingredients beforehand:
Serves 4
Spice Mix:
2 tbsp curry powder
1 tsp all spice
1 tsp nutmeg
1.5 tsp smoked paprika
2 tsp dried thyme
1 tsp cumin powder
½ tsp cayenne pepper (adjust to taste)
1 tsp white pepper
Curry:
2 tbsp olive oil
1 large onion, peeled & halved
2 cloves garlic, peeled
1 red chilli, diced
1 large red capsicum
1 zucchini, diced
300g sweet potato, diced
200g cauliflower florets
800g can crushed tomatoes
500ml vegetable stock liquid
1 cup frozen peas
125g baby spinach
½ cup shredded coriander, plus extra to serve
Greek yoghurt to serve
Serve over rice
