The Kebab that's commonly found in Indonesia is the Turkish Doner Kebab. Although, it's a bit different from the og.
We only use either tortilla or pita bread. No other type of bread. The filling is usually beef for the meat; tomatoes and lettuces for the veggies. For the sauce, it's the spicy sambal sauce, ketchup, and mayo. And that's it. That's what a Kebab here in Indonesia.
If you tell Indonesians that there are types of Kebab where you use a skewer and eat it from from the skewer most of them would be surprised and might even have a hard time trying to believe that because it doesn't sounds like the Kebab that we commonly eat here.
Funnily enough, the famous Sate/Satay that's born in Java Island is actually made by a Javanese who got inspired by the skewered kebab.
Oh and another fun fact, tortilla in here is known as the kebab bread even though it's from Mesoamerica and most commonly used as taco and similar dishes in the west.
