      I followed the recipe today.
      Are you sure it's accurate? Only 3 Tbsp milk??? I did that, and my custard liquid that I poured over the fruit was thick like honey and dark yellow from the egg whites. For it to be white and more pourable, it would have needed more milk, I think.
      Well, it's in the oven now, with only 3 Tbsp milk, and it's been baking for 1hr, and it's still runny like your halfway-point video.

      If you reserved 1 cup of rhubarb and 1/2 cup of strawberries and sweated them off first you could make your own glaze from scratch. A squeeze of lemon brightens the flavours up a notch.

    I have to tell you, Chef John. I made this on Friday night and it is THE BEST thing I have EVER made. I'm a typical wife, work my 8 hours a day- 5 days a week, come home and cook for the hubby. Been doing that for over 11 years so I've had my fair share of good home cooked meals. But this...oohhhh THIS! This pie is THE best food I have ever made! Better than any breakfast, lunch, dinner, or dessert that I've ever made!

    I made three of these last year for a weekly meeting I attend. It was on the Monday after Mother's Day. I received many compliments from people who said it was as good or better than their mother's. That's the highest complement a baker can get. I'm making it again this year for the Monday after Mother's Day. I know it will be just as good because I am one of those "crazy" people who weigh out their ingredients. This pie requires 150 gm of strawberries and 365 gm of rhubarb. It's a small thing, but painting the top with the red jelly/water mixture makes a significant difference. It's so much prettier with that shine on top. I use either raspberry jelly (when I can find it) or red currant jelly. Thanks Chef John.

    My GMother made this pie for me for my birthday when I was a way little boy and every year after and I helped!! They had a veggie garden and grew their own Rhubarb, Strawberrys, etc si=o it was always fresh. I've made it myself a few times since she died, it's fairly easy but I NEVER use store crust [or breads either], she didn't and I prefer to make my own because I want to know what's in it. This pie is so delicious and it's good for you too. And as GMother always said, once you cut it all of the calories escape so no worries!!

    My Mom used to make this pie half a century ago, and so from that source, I say there is one step missing, although John's pie looks gorgeous and yummy. But our rhubarb custard pie (sometimes with strawberries) had a streusel topping which is just flour sugar and soft butter mixed into pea sized lumps and spread on top. You can use cinnamon or allspice instead of nutmeg if you don't have any. Only a small tiny bit.

    Made it - and I just used my countertop toaster/oven because I did feel like heating up the kitchen with the oven! EXCELLENT and very refreshing! Serve COLD with an ice-could glass if milk and some strong, dark coffee.

    My mother used to make this every summer. She grew a small bed of Rhubarb and it took we kids a while to like the sweet/tart taste of the pie. I sure would love to have one now. 😊

    I enjoyed this video! Just made two of these Strawberry Rhubarb Pies with fresh rhubarb from the garden and they are cooling on my kitchen counter. Smell and look delicious. Used almond milk as my husband is allergic to dairy. Hope they taste as good as they look. Thanks Chef John!

    It’s Summer now and finally they received the Rhubarb from UK at our local supermarket in Dubai.
    My last year attempt was to make it Jammy Oliver Style but by the time I went to the supermarket the season was over.
    Therefore this year, I bought a large bunch of stems to make it at least twice a week (impulse purchasing)
    I kept thinking do I want it hot or cold , tart or sweet. I wanted something like the one I had it in Paris or at Cafe Lalo in NYC.
    While watching religiously tons of your fabulous videos on crab, pad Thai, risotto, cakes , cookies I said to my self “ there is no way Chef John could missed Rhubarb” and Voià my prayers were answered.
    I ran home from work (family emergency lol) and baked it just to eat it at dinner time.
    It tast sooo good and on the correct level on tattiness. The crust I used was short crust. We do not have the same terminology as US. Meaning I didn’t know what is a pie dough. We know short crust, puff pastry and Pizza Dough. It’s the same as we do not have heavy cream. Just single or double or whip cream. So it’s confusing as I am still not felling that I should need the dough yet.
    Since it’s a tart I felt short crust would do. And it was perfect.

    I love rhubarb. My mother used to make a pie similar to this several times each summer. So delicious!
    I am going to try this recipe and add a bit of vanilla to the custard, see if it makes it even better.

    I know you said this was the best way to enjoy rhubarb, but I have to say, my favorite way, which is what I used to do all the time as a kid, was get some fresh rhubarb and just dip it in some sugar. The tartness of the rhubarb with the sweet sugar was just amazing :)

    Strawberry and rhubarb go so well together! The rhubarb somehow adds several new layers of taste to strawberries. The flavor is deeper and more complex. Many, many moons ago when I first taught myself to cook, I made a lattice topped strawberry and rhubarb pie. It was incredible. I had never eaten rhubarb prior to that and to this day don’t know if rhubarb has its own distinct flavor. I just know that since that time of discovery, I will only buy strawberry-rhubarb flavored _whatever_ . I make a special trip to World Imports just to buy their store brand strawberry-rhubarb preserves. I buy 3 or 4 to make it worth the trip and to ensure I have enough for 4-6 months. By the way, I highly recommend World Imports for their international food section. They have a lot of signature specialty items from different parts of the country and from other countries.

    When I was a kid we had a big patch of rhubarb next to the garden. It would grown in every year. I used to eat it raw. I loved it. We also used to have strawberry rhubarb pie quite a lot. This looks delicious.

    This was a pie my grandma made me as a child in Montana, I think it originated from a old Fannie
    Farmer or Betty Crocker black and white illustrated book, but I always thought it was a original from grandma, this pie is so connected to our family history, I haven’t not see a recipe for this in many other places, so Iam surprised that here it is!

    In my family we have a similar recipe, it is a kind of pie, of Swiss origin that my great-grandmother used to make, she called "Gateau". A simple dough of flour and butter or lard as a pastry only on the base with a filling of diced (uncooked) rhubarb, with a mixture made of flour, milk and eggs called "Papeta" (similar to crepes mixture) all that with sugar and butter on top, then baked until cooked. It can also be made with green apples or plums or berries such as Calafate, raspberries or currants or gooseberry. Greetings from Punta Arenas, Chilean Patagonia.

    Knots Berry Farm here in Ca .. the Chicken Dinner restaurant- which has been there almost since the original berry stand - served cold rhubarb with .. possibly before dinner- (jeez that was EARLY 80’s late 60’s.. )
    Anyway- he loved rhubarb- he would have loved this .,
    I’ll bake it in his memory ...
    Then of course cut him a slice,, and eat it for him

    no, it's tart/sour. it's a popular summery snack here, given to kids raw after it's been dipped in a bit of fine caster sugar, and it's also popular as a jam. grows well in the backyard unattended, but like chef john said, the leaves are toxic so be careful.
