I tried making it from scratch my first and only time two years ago. I soaked it for 3 days and let left it in my hot garage but only half got soft like yours. I gave it an extra day and there were still some semi hard ones. I ended up blending them and making miondo with some and water fufu with some. Stubborn western (Mexican yuca).
Ohhh I always wondered if this would work in winter.i came across a video where some one said to pour hot water in the cassava to kick start fermentation
