GREEN BEANS RECIPE
1.5 pounds (675g) green beans trimmed
2.5 teaspoon Kosher salt divided
2 tablespoons (30ml) extra virgin olive oil
½ cup (35g) sliced almonds
1 shallot minced
1 garlic clove minced
½ teaspoon black pepper
grated zest of 1 lemon
2-3 wedges fresh lemon
Bring a large saucepan of water to a boil with 2 teaspoons salt. Add the green beans and cook 2-3 minutes, until they turn bright green. Drain, then immediately rinse under cold running water to stop the cooking. Drain again.
Heat the oil in a large (12-inch) non-stick skillet over medium-high heat. Add the almonds, stirring to coat with the oil. Add the shallot, garlic, pepper, and ½ teaspoon salt. Cook, stirring frequently, until the shallots become softened and the almonds are toasted, about 5 minutes.
Add the green beans to the skillet, using tongs to toss them with almond mixture. Cook for 2-3 minutes, until heated through. Then, transfer the green beans to a serving bowl. Sprinkle with the lemon zest and serve with the lemon wedges.
NOTES
The green beans can be parboiled up to 3 days ahead. Store in the refrigerator until ready to cook.

Yum!! I like them off the vine. I was always taught to cut both ends off.
That works too but you don't really HAVE to cut the bottoms :)

Great recipe, thank you! I've never used sliced almonds, but I will now. I fry about six slices of bacon cut into bite size pieces, then use the bacon grease to sauté sliced mushrooms, onion and garlic, then add the green beans & bacon bits. I think almonds would be a perfect addition.

I love the idea. I Skip the blanching and go right to the sauteing. When I prepare green beans. I saute them with oil, mrs dash and lemon juice. They don't have a raw taste at all.

Hey Dani. It is funny because cooking beans should be relatively easy however let me tell you, I have goofed up many times. For our Thanksgiving here in Canada which was in October, I made string beans from a recipe I grabbed on pinterest. I didn't enjoy it at all. I should have used your technique. I like the texture to have a little bite to them but mine came out mushy. Who needs pinterest when we have you!! I should have known better!. I am loving your cook book!!!! All the recipes are easy, manageable, affordable, healthy and of course, so so delicious!!

I cook the beans like you and then while hot I drizzle olive oil, red wine vinegar, 1 or 2 crushed garlic and a can of hot pinto or kidney beans as well as some finely chopped shallot. Now, after seeing yours, I shall be adding hazelnuts which I have plenty at all times. Try and let me know what you think. A Yugoslavian friend gave me this recipe Maria 🌷🇬🇧🌷

You can slow down videos on CZcams if you are having trouble keeping up. Click on settings, from those options click on Playback Speed, and there you will see options for slower or faster. Also, you can pause the video, fast forward, or rewind… and every single time you have the option of clicking OUT of a video… or be mean, whatever. You have a lot of choices though.
