"That’s Just Peachy" Blueberry Bourbon Peach Cobbler

  • Enjoy the smooth vanilla taste of Bourbon, combined with the sweet yet tartness of fresh Peaches and Blueberries . It is all topped with a cobbler crust that is as fluffy as a cloud and melts in your mouth like cotton candy!
    Ingredients:
    Filling:
    o 8-10 fresh peaches
    o 1 ½ cup fresh blueberries
    o 2 teaspoons lemon juice
    o ¼ cup Bourbon
    o 2 tablespoons cornstarch
    o ½ cup granulated sugar
    o ¼ cup brown sugar
    o 1 teaspoon cinnamon
    Topping:
    o 2 cups flour
    o 2 teaspoons baking powder
    o ¼ teaspoon salt
    o 1 ¼ cup unsalted butter
    o 1 cup heavy cream, plus tablespoon for brushing
    o 2/3 cup granulated sugar, plus tablespoon for sprinkling
    o ½ teaspoon cinnamon
    Instructions
    1. An easy way to remove the skin from the peaches, is to bring a large pot of water to a bowl (212 degrees). Prepare an ice bath. Add no more than 3 peaches at a time, to the boiling water. Boil for 30 seconds, placing them into ice bath immediately after that time. Remove from bath and let air dry. Next pull skin off from the center of part, where the steam is located. Gently pull down and remove skin.
    2. After skin is removed, pit and slices peaches. Don’t slice to thin. Place peach slices in a bowl, add both sugars, Bourbon, lemon juice, cinnamon and mix. Next add in cornstarch and combine. Finally mix in blueberries, being careful not to break them. Set the mixture aside.
    3. To make topping, combine flour, baking powder, cinnamon and salt. Next cut in butter, using your hand or a pastry blender, mix butter and flour into a course crumb. Add heavy cream and mix with a wooden spoon to spatula until combined.
    4. Preheat oven to 400 degrees. Pour filling mixture into a 12 x 8 or a 11 x7 rectangle baking dish. Place scoops of the dough randomly over top. Don’t not smooth completely over top, allow spaces, as dough will expand. Brush the top with heavy cream, and sprinkle with sugar. Bake for 35 to 40 minutes. Filling should be bubbling and thick. Serve and enjoy!

    Now Kirk baby, I gotta tell yah, the recipe for the dough was different in using cream. The outcome was beautiful. Yes, being from New Orleans, we are serious about our food. Never thought about adding blueberries to peach cobbler or adding Bourbon. Awesome job Kirk. At some point and time, hopefully a cookbook may emerge. Continued Blessings.
