I just love loaded fries, dirty fries, there so much you can add to them them that works. This is a perfect example (and the guac in a bag trick is great!). 2 versions I'd like to suggest; beef stew fries & hot BBQ chicken fries.
Beef stew fries is a classic Belgian streetfood. For a typical Dutch (late night) streetfood, go with a ‘kapsalon’ (‘hairdressers’). It’s fries or fried potato slices, loaded with döner kebab, iceberg lettuce, tomato chunks and garlic sauce. It would be epic to see chef Tom make kebab on a Yoder Smoker.
Great technique for the guacamole. I have tp give that a try.I think I know what I’m making for Cinco de Mayo!!

Just cooking tripas over a hardwood fire would be sufficient; no need to subject them to an hours long cooking process.
The secret ingredient to queso is canned evaporated milk, not condensed... but the evaporated milk is magic for a creamy queso.

Can you use yogurt instead of sour cream?
Greek yogurt works pretty well as a substitute. Probably won't need as much water.

Normally I am a taco first guy also, but I am thinking that this particular dish would burrito better! Though, personally I find American Cheese so damn disgusting that queso needs a re-work. Not to mention that final queso that he spooned over the fries was way too thin and runny for my liking also.
