That's perfect! Just homemade mash potatoes and green beans and it's a meal for two for sure. I'd actually rather make two of these for a family of four than a whole turkey.
I’ve been making Turkey roulade for the past few years, typically for eight people. It’s a bit more up front work but a lot less stressful than cooking a whole bird on the day. You can prep the day before, wrap tightly in cling film and pop in the fridge. Then just and hour or so in the oven on the day.

i like this series since i read so often that cooking for one is "too much" hazzle but then you eat crappy food and a really nice meal is also a threat to oneself with something nice and not do something ONLY for others (like decorating), but often it's not really the workload and more "i have no idea how to scale things".
And while it may lacks potatomash, well, you can make them fast yourself
Easy enough to throw in cut up potatoes and carrots to roast with the turkey. Open up a can of cranberry sauce and then it's a Thanksgiving meal. Instant mashed potatoes would be better than no potatoes at all.
Skip the egg and replace the stock with brandy 😎 also variations that include dried apricots, diced apple, walnuts or pecans can add something special 🦃
Dried cranberries in the stuffing is genius, I'm doing this next time I make stuffing.

That looks amazing! I might have to add a few green beans and some mushrooms since the green bean casserole made with cream of mushroom soup is my favorite holiday food.
My grandmother and mother always put raisins in the stuffing but the cranberries would be super. Xo

Bummer you overcooked it, but it's a perfect idea for me to cook for a senior and me for Thanksgiving that won't take me all day.
Not going to do any of this, but still I watch for osmotic inspiration. My building has brought in a chef to show us how to cook & entertain for Thanksgiving. I'll just be there for the free food.
