I made kimchee vegan for a friend who doesnt do any animal products. I like fish sauce or dried shrimp in my own kimchee recipe but for her i used a square of kombu. I soaked it in soy sauce and a bit of shiitake broth. Then i finely shredded the kombu and added the soaking broth to the pear/rice flour/hot pepper mix. The "sea" flavor of the kombu amd the long chewy bits of kombu really added to the kimchee. Just in case you want to make for your daughter. That umami from the kombu really is yummy. But im kinda addicted to seaweed of any type 😂

If you use goats cheese, you run the risk of ruining the texture of the dressing. However, using Parmesan in the dressing (or omitting it instead for suggested nutritional yeast, or another good pinch of salt) and mixing your other cheese into the salad itself will solve the issue, and most definitely delicious.
I’ve now compared a few other versions to yours - yours still ranks above the others. The addition of avo and spice (I use cayenne to taste) is great - thanks !
I made this today and it was delicious! I used roasted cashews instead of almonds. And I added some kale that I massaged with the dressing. It complemented the rest really well.

Yes, avocado, jalapeño and cilantro! Of course there are probably many variations on this that would work, like lime or blood orange juice instead of lemon, or purple cabbage instead of green or ume plum vinegar instead of rice vinegar and it can be eaten with raw whole cabbage leaves that are lightly salted with coarse sea salt instead of chips... etc etc
The first time I made this salad it was with cabbage. Then I switched to romaine lettuce. MUCH better. I always add basil to my dressing. But the next time I make it I will also spice it up and add avocado.

They're fully submerged? So peel them and that keeps the oxidation away? Great idea. Reminds me of the crocks that seal with water.
