Potato And Chorizo Breakfast Hash Cooked On The Traeger Timberline 850

  • This dish is cooked all in a skillet; we have used the Traeger cast iron skillet but any heavy oven-proof shallow pan will work just as well. It's not only a breakfast dish but would also make a fantastic brunch or supper dish. If you have any cold cooked potatoes left over from the night before this is a really tasty way to use them. It makes a great sharing dish just place it in the middle of the table and let everyone dive in. If you don't have chorizo you could substitute pieces of ordinary sausage or thick cut bacon lardons. Try adding some crumbled black pudding for an extra layer of taste.
    Pre-heat the Traeger and the skillet to around 210C (410F) and gently fry the onions and garlic in a little rapeseed oil until soft and translucent then add the chopped chorizo and cook for a further couple of minutes.
    Stir in the potatoes and cook with the lid down for about 5 minutes until the potatoes are soft.
    Make a couple of indentations in the potato and chorizo mixture and crack an egg into each one. Put the lid down and cook until the white is firm but the yolk is still runny, about 2 - 3 minutes.
    Season with the salt and pepper, garnish with the parsley and serve.
    This can be cooked on any BBQ with a lid not just on the Traeger.

    Which of the traeger pellet varieties have you used for this guys? I can't recall a mention of the pellets used in any of the videos I've watched so far.
    I've found your channel today and I am blown away. I love the recipes you're showcasing and can't help myself ending up sat here with mouth watering. Great presentation and really helpful videos, thank you. I have just got myself a traeger pro 575 and I'm looking forward to trying out your recipes on my grill for the first time. Keep up the great work guys.
