MEXICAN LAMB KOFTA STUFFED GARLIC CONFIT BREAD & KEBABS W/ A CHILTEPINE KIWI PEAR LEMON MINT SAUCE

Kiwi Pear Lemon Mint Sauce:
1oz Sherwood’s Mesquite Smoked Garlic Confit
2 Peeled Kiwis
2 Peeled Pears
Juice of 1 Small Lemon
Zest of 1 Lemon Small Lemon
6 Fresh Yierba Buena or Mint Leaves
2 Chiltepine Peppers
Pinch Salt
Mexican Kafka Kebab Mix:
2 Lbs Ground Lamb OR Beef
3oz Sherwood’s Mesquite Smoked Garlic Confit Spread
1/4 cup Kiwi Pear Lemon Mint Sauce
1/2 Red onion
1/4 cup Chopped Fresh Parsley
1/4 cup Unsalted Shelled Pistachios
1 Tbsp Ancho Chili Powder
2 Chiltepine Peppers
1 tsp Paprika
1 tsp Onion Powder
1 tsp Garlic Powder
1/2 tsp Ground Ginger
1/8 tsp Allspice
1/8 tsp Celery Seed
salt & pepper to taste
Blend in food processor or blender, then mix with meat. Refrigerate the marinated meat for at least 2 hours so the meat is easier to form around the metal kebab sticks that will be grilled.
I had some extra meat and a baguette left over so I hollowed out the middle, filled it with the meat, then air fried it for 15 minutes on 400 F.
