    2 zucchini
    1 eggplant
    2 peppers
    To sprinkle
    Breadcrumbs 40 g / 1/2 cup
    Parmesan 40 g / 1/2 cup
    Salt 1 tsp
    Basil 1 tsp
    Thyme 1 tsp
    3 cloves of garlic
    olive oil
    In the oven / 45 minutes / 200C / 400F /
    5 tomatoes

    I made this, but I also added yellow squash and instead of using fresh tomatoes and grating them, I just used a can of Italian style crushed tomatoes and I added some fresh chopped basil and cilantro. Scrumptious!!

      I was thinking the same thing when I saw this video but instead of the crushed tomatoes I would use the canned crushed tomatoes that are spicy for a little kick. Yum

    I tried this today with onion, carrots, eggplant,bell peppers, potatoes. In the last 20 minutes added marinara sauce ,nacho cheese as I only had those and my it was heavenly. Will surely do it again.

    I tried this recipe and maann let me tell you. Being Jamaican I had to spice it up a bit so I had some scotch bonnet pepper and used spaghetti sauce instead of tomatoes and add more bread crumbs mixed with the mozzarella at the end. Man it badd. Thanks gal , sell off

    I like how people put their own twist on the recipe! It's great that the recipe appeals not only to people from many different countries but also different diets. Obviously, there are quite a few vegetarian ms, at least couple of people are on keto.
    I was impressed by the number of comments about people who have family members that aren't keen on vegetables liking the recipe! Im going to try the recipe, but since I live alone, Im going to have to cut the portion size down.

    Made this a few days after 1st post, came out sooooooo good we ate the whole platter! I did not bake veggies for 45 min., just threw at all together for 1 bake at the end.

    I came across this recipe and happened to have eggplant and zucchini on hand. The dish was so easy to make and quite delicious! I used canned crushed tomatoes instead. Thank you for sharing.

      If I had good tomatoes, I would just chop them up and scatter in the pan or as someone else commented, roast the tomatoes, peel and chop. Recipe is a good basic.

    This is very simple, I made this with a slight modification, i roasted the tomatoes and pureed them after because i wanted to intensify the tomato flavor while getting rid of the excess water in tomato. It turned out really great and i loved it.

      A mixture of tomato paste and tomato puree might work our well in lieu of the grated fresh tomatoes with their large water content

    This is a lovely food and a great recipe and healthy too, So thank you for your post. However please don't say it takes 10 minutes ! this is a 35 to 40 minute food, with fair amount of prep work required to cut all the veggies and make your breadcrumb mixture etc. It takes time. I know it's tempting to say 10 minutes to attract more viewers but in reality it's going to take a lot more than 10 minutes ! So tell the truth & tell it like it is to build trust. Thank you.

    I made this yesterday! It was delicious! I put a can of crushed tomatoes and onions. It was my first time eating an eggplant! So delicious! Next time, I think I'll add some spinach! It took longer than 10 minutes, but it was worth the wait! Thank you for sharing this recipe!

    This is the second time I have made this and my family loves it. We don't have paprika peppers where I live in the United States. So, I used Paprika powder to taste the first time I made it. And, I added yellow squash in place of the paprika peppers making it a little like ratatouille, and it is wonderful. Tonight, I forgot the paprika powder but added a little extra garlic powder and it came out fine.
    In place of grating the tomatoes which took my 30 something minutes the first time I made it, I used a blender and pureed the tomatoes into a liquid. It is faster and comes out smoother, so you can pour it out evenly across the pan.
    Tonight I forgot to cook the vegetables first before putting on the tomato paste and cheese. It still tastes great. But between the veggies and cheese, it came out soupy at the bottom of the pan. Make sure you write down when to add what as it effects texture more than taste.
    I hate cooking and am just learning. But, I get excited to make and eat this every time.
    Thanks for the amazing recipe!
    PS- If you are making this for the first time, set aside at least 30-45 minutes of prep time before turning on the oven to save energy. It takes so long to wash, cut, pour, mix, and prepare everything that the oven will be heated and running a while if you fire up the oven the same time you start the recipe.
    At least that is how it has always been for me.

      Paprika peppers are the long red ones. Red peppers can be used for paprika peppers.
      If it's soupy use it for a soup base!.

    I have actually made this several times. I have made substitutes when I’m short on time. Replacing the tomatoes with marinara or spaghetti sauce and breadcrumb with crush ritz (or other buttery crackers). Sometimes I buy the garlic in a jar to sub fresh garlic. It really cuts down on the prep time.
    Healthier version; Sticking to the fresh veggies and 1/2 the cheese makes it a little more healthier n everyone adds their own cheese if needed.
    Overall It’s a hit with the family (inc 3 small kids 6 and under). It’s a great way to get in veggies and it’s tasty too. My family has a small garden so eggplant, zucchini, tomatoes, and peppers come straight from the garden. 😋

      Made this today and it was delicious. I did not have enough parmesan, so I used a bit of nutritional yeast. NY has a cheesy flavor and when mixed with bread crumbs, garlic, salt, etc., you could not tell the difference. Great recipe.

      @@apocketfullofsunshine6060 sorry but I’ve never substituted anything for eggplant so I don’t have any suggestions. To be honest, the zucchini after it’s cooked doesn’t have much of a crunch left but it’s not mushy either if that makes sense…

    I just made this last night with some minor changes. I added some black pepper to the bread crumbs and parmesan. I sauteed half an onion and added a little white wine as they were cooking down, I put the onions as well as some more black pepper and parmesan and a dash of Tuscan Sunset herbs into two cups of tomato sauce instead of five tomatoes (Hey its January) I also used 1 1/2 teaspoon of granulated garlic instead of fresh cloves. We found it to be delicious. Served it with a little brown rice and it was a great meal.

    I just made this amazing dish last night! I’m on Keto, so I switched out the breadcrumbs with pulverized pork rinds. That was the only change that I made and it is just so delicious 😋. The amazing aroma that fills your home, as it bakes, makes your mouth water. My husband, who is not a huge vegetable lover, could barely keep his fork out of it until it cooled. This dish is definitely a “keeper”!!!

    I like these videos and I actually made this dish. It was the first time my family and I tried eggplant and we didn't like it so I made it without the eggplant and it was okay but not good enough to make again. The breading was delicious enough to make in any other dish!

    Thank you for recipe!! I just happened to have all ingredients, so I chose this recipe to try for the 1st time. It's almost done baking, just 20 more minutes after tomatoes/cheese & back to oven. I agree, not 10 minutes prep, it took me an estimated 1 1/2 hours or so.
    Anyway, I can't wait to try this. It smells great!! I'll let you know 😁

      With my chopping skills, it would take me an hour and five minutes to chop. Lol The cooking time is easy for me.
      Why grate a tomato? I would just take a potato masher to it. It would cook down.

      @@theresamcdonald4730 10 minutes is just for washing all the dishes. Then let's assume 10 minutes for prep and 1 hour cooking so effectively 80 minutes - nothing impressive. You could bake a cake in that much time. Plus the cheese makes it tasty but instantly unhealthy.

    My mom makes hers very similar (no peppers though and canned diced tomato to make it kind of saucy) It's a treat every time she makes it because it's just so fresh and tasty. I will be making this tonight alongside shrimp tacos for us! I never make her dishes as good as her though so I hope she likes it 😊

    Es ist sehr lecker
    Ich habe noch eine große Kartoffel etwas in kleineren Scheiben dazu gegeben. Das Gemüse nicht so grob gewürfelt wie in d. Video. Nach 30 Minuten auf 180 Grad war meine Nahlzeut fertig und lecker 😋. Danke für diese Rezept Idee 👍👍.

    This looks so yummy, I would use organic canned tomatoes, and gluten free breadcrumbs and red peppers, and maybe some hot ones as well . And make yummy garlic bread as well to go with it. Thank you . Blessings.

    This was delicious. The only thing didn't have was zucchini, so I used squash. I think next time I'll spice it up with habanero or Korean peppers and use the suggestion of another person in the comment section who mentioned about adding penne pasta. Thank You from Virginia!

    Looks delicious. Am going to try after I get eggplant at grocers.Think I'll add some penne as someone suggested. Looks pretty quick & easy to put together. The bake time doesn't bother me. I wonder if left over can be frozen. I would think so.

    Preparing the dish takes 10 minutes while baking it takes 45 minutes. So it's not really a meal ready to eat in 10 mins. Still going to try this though

    Two things I would change. First run tomato juice through siv to get rid of seeds. Second, add the mozzarella to the bread crumbs and add to final bake😉

    I did this and it only took 10 minutes to cut everything. Of course, it took an hour to bake, but you can't expect vegtables to cook in 10 minutes. Not sure why everyone has a problem with that

      @@erbsenkaffee8720 the thing about recipes is you can tailor them to your taste,replace the cheese with a vegan substitute. I mean i roasted my tomatoes before pureeing, and i used Pecorino Romano instead because i love it better. Tailor recipes to your tatse buds.

      Yes, that is true, and it is weird that it says 10 minutes if you have to bake it for more than an hour, not counting the process of chopping the vegetables🤔🤷🏻‍♀️

    Looks delicious - but I’d lose or greatly reduce the salt if you want to promote it as healthy. Also, how can we prepare it in ten minutes if just the second time in the oven takes twenty minutes - looks more like an hour prep time.

    This video appeared on You Tube this morning and I went out right away and bought the vegetables and made it for supper. I cheated though by using Marinara Sauce instead of your suggested crushed tomatoes. I may never eat anything else in my life!!!!! Thank you for sharing this gourmet delight.
