1 medium stick of butter, cold and cubed (1/2 cup or 115 grams)
1 large egg

Dave, great recipe & yes on us & the girls , we have a mexican sister - in - law & her 3 grown daughters & my wife learned to cook mexican recipes from them, so my wife may want to be the one to make this dish. With that many emps, baking is the the best way to go , but if you are only going to make appx. 4 - 8 , deep fry them in vegetable oil & they are even better. I will make the 2 sides , guacamole & mexican rice , will be delicious . Virgin( no alcohol) mango Margheritas for all of us to drink. How's that sound ? Keep your stick on the ice pal. btw, if you have queso fresco cheese in your area , try/use that in your emps as it is rated # 1 mexican cheese & like you said try to find a block to fresh grate yourself instead of pre-shredded as the fresh grated is much better. Also , empanadas are the mexican version of Italian Stromboli or a calzone , the differences are the the Italian Stromboli & calzone use pizza sauce the one has the sauce inside the dough & the other does not as you dip it in a bowl of sauce. They also have a jumbolii which is 2-3 times the size of a Stromboli but exactly the the same otherwise

Never had the Mango Margheritas. I am going to try them as I don't drink. I've never seen the cheese, but I'll be on the lookout. I've made the stromboli and they are good. Hi, do I use the same dough recipe if I decided to fry the empanadas instead of bakimg them? Do I have to put the egg wash if I’m going to fry the empanadas? I’d likely not add green beans and corn, but will use the common empanada veggies.
